Hi! This is Dave for Expert Village. Today we're going to make some steaks with brandied
mushroom sauce. Okay, now we're getting to the mushroom area of our steaks with mushrooms
in brandy sauce. There's quite a few different types of mushrooms you can use. There's wild
mushrooms that are actually picked in the wild, that's why they call it that or exotic.
Now a days, you can almost get any type of hot house mushrooms you want. These can be
reconstituted, and I'll show you how to do that shortly. You can use porcinis also. They're
a really good strength mushroom. Sometimes the dried mushrooms once you resoak and reconstitute
them, have a lot more flavor than the fresh ones. There's a lot of availability right
now with fresh mushrooms around. Also, these are the regular American mushrooms, the button
ones. Of course, these are just a mess. You can get these anywhere in your supermarket.
I find the flavors of both and the textures of both really different. The wild mushrooms
or the cultivated mushrooms like the shiitake here or porcini have a real chewy quality
to it where the American mushrooms, the button mushrooms, are much softer and people are
more familiar with it. The 2 of them together are really a great flavor and we're going
to be using the liquid from the porcini or shiitake and concert with these to make a
wonderful sauce for your steak.
