Hi! These... are selfmade Pretzel-Buns. And you will see how you can make them on your own...
in this Episode of "BBQ aus Rheinhessen"

Here are our ingredients we need for our Pretzel Buns... first of all..
a kitchen-machine, 550 grained flour
75 Gramms Butter, salt, one cube of yeast, some milk and some water
this is all you need for the dogh and later on
we will need.. baking soda
the dogh will cook in a water-soda mix...
so they can get their typical color and taste.
now i woll prepare the dogh..
let´s start:
you start by adding 100 ml of warm water
and 150 ml of warm milk,
then add the 75 gramms of butter
and the cupe of yeast
now let the kitchen machine combine the ingredients.
now i got a nice
Milk-butter-water-yeast mixture..
now add 500 gramms of the 550er grained flour
one teaspoon of salt...
and let the kitchenmachine do it´s job..
for at least 3 Minutes
after 3 Minutes
we have a nice yeast-dogh ...
let it rest...
for abour 10 minutes in a warm place...
after 10 minutes the dogh is kneaded thoroughly again...
but now.... i let it rest frist...
in this pan.. there are 2 liters of water.. heating up...
you will need a skimmer, the baking soda and
and a tablespoon
the machine will knead the dogh again for 3 minutes
and then
we start making our buns
the dogh is ready...
got a baking tray with waxed paper here...
the oven is preheated at 190° Celsius on convection
now i will start making the buns
take a piece of dogh.. around 100 gramms
press it firmly.. and then
fold the outsides in...
fold until you realise that the surface becomes firm...
this will help the dogh to rise in the oven..
i will prepare the other buns.. and then we start with the pan
the water is boiling
and now carefully add
6 tablespoons of baking soda
add it spoon by spoon because it will foam
don´t add the 6 Spoons at one time...
this wouldn´t be good..
when the baking soda is combined with the water..
take the skimer and lay the dogh in the
pan
now let them cook for 1 minute...
press them down so the surface is covered by the soda
take them out after one minute
now place them on a baking tray with waxed paper
now grab a knife...
and score the Buns
and then
add some
sea salt
on the pretzel Buns
now place the tray in your oven ... at 190° convection heat...
for about 20 minutes...
Look at them!
perfect !
really hot... but they smell
awesome!
