Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
Everybody knows how to make Cauliflower Cheese.
Boil cauliflower, make cheese sauce, mix, Cauliflower Cheese.
I wanted to do something just a little different.
I've got a head of a cauliflower that I've trimmed and cut into florets.
A 150 g of grated cheese.

400 ml of milk.

4 ounces of butter.
2 ounces of flour.
3 eggs.
I'm going to start by boiling the cauliflower for about 10 minutes in salted water.

That's 10 minutes. Drain it and put them to one side.
I've melted half of the butter.
That's only 2 ounces of butter in this pan and add in the flour.
Stir it around

and cook it over a medium heat for about a minute.
I'm gonna start adding in the milk very slowly to make a béchamel sauce.
A little at a time, stirring around, make sure it's all fully mixed.
At this point I'm gonna change to a whisk.
I find that using a whisk when melting this kind of sauce leads to a much smoother sauce.
Keep it stirring, low heat.
When it's all properly mixed, add in a bit more milk.
Stir it in.
Those of you who have seen my
Welsh Rarebit video will have seen me doing something like this before.

and once it reaches the boil, turn the heat off and add in the cheese.
And...

Mix it all so that it's nice and melted.
There we are. Lovely, creamy cheese sauce.
So, if this was a straightforward cauliflower cheese recipe,
I'd be saying "Khuda hafiz" by now. But it's not and I'm not going to.
I've poured about two-thirds of the cheese sauce back into the jug
and into this third, I'm gonna add the 3 eggs.

??? it round. Mix it all very nicely.
The cauliflower, I've chopped it into

When this is all mixed,

I'm going to season with some salt and pepper.

Make sure it's all, well, mixed.
Now I'm ready for the next step.
If you've got one of those lovely, ring moulds,
this would be ideal for it but I don't have a ring mould
so I'm gonna use a cake tin with a pop-out bum.
I've greased it well on the inside.

That's good. This is gonna go into the oven at a 190 degrees Celsius for 30 minutes.
30 minutes later it's lovely and golden brown. I'm gonna try and get it out.

I've melted it and I'm just gonna pour it over the top.
This is gonna go back into the oven for 15 minutes at 230 degrees Celsius.
15 minutes later there's your beautiful Cauliflower Cheese.
