Hello and welcome to a new Episode of BBQ aus Rheinhessen
Today we try something really big...
These are
deer ribs
and These are going on a Weber Smokey Mountain Cooker
well.. not today... today i am seasoning them
and tomorrow they will go on the Grill.
let´s take a look on the ingredients:
First of all.. i sawed through the Ribs
so the look like short ribs...
downside you see the Bones... topped by the meat
they are really looking good
next step is to get rid of the silverskin
the Membrane that is on the bottom side
take a sharp small knife
and carefully go
under the silverskin
turn the knife a little bit..
that you get a small pocket
and then grab some
Kitchenpaper...
an pull of the skin
when you got rid of the Silverskin
i start mixing up the herbs and spices for the seasoning
you need Juniper berries
Coriander
Allspice
Thyme, Ingwer
a nice pepper blend
Salt
These are the ingredients... i start with the Juniper berries
7 berries
i almost forgot.. here are 2 cloves... into the motar..
one Teaspoon Coriander..
one Teaspoon Coriander..
one Teaspoon Ingwer
10 Peppercorns
one Teaspoon Salt
and then i add
i corns of Allspice...and then i break it all up in the Mortar.
i will put some olive oil
on the Ribs
just rub the meat
and apply the seaoning
now the meat is seasoned with the herbs and spices
now i will cover it in Cling film and let it rest in the fridge
over night.
i am thrilled what will happen...
the next day.. the Deer Ribs move to the preheated Watersmoker
just a last look on them...
rested over night...
and now lets put them on the Weber Smokey Mountain Cooker.
Maybe you realised, that i am not at home today...
i am at a friends house.. and
we have a litte BBQ Meeting going on...
and i want to try the deer ribs with
some friends
open up the Grill
nice thick ribs
this will take a while to cook
Close the lid..
at 108° Celsius.. let them cook for a few houres.
and see what happends :)
8 houres have gone by...
the ribs are about
93° Celsius hot
and now.. let´s see how they look like..
as far i can tell now..the meat is tender!
let´s take a look inside...
time to cut them through...
a nice smoke-ring
and now ist time to taste them..
you can pull them appart
they are HOT!!!

still a little chevy
really juicy
i was worth the efford
