Today, I'm going to create a quick and easy Indian meal. I'm going to start by making a delicious stir fry with salmon and Punjabi 5 Spice sauce, and then I'm going to serve it in a wrap. All you need is: salmon, peppers, red onion, fresh coriander
(roughly chopped), and Patak's Punjabi 5 Spice Indian Stir Fry. So, my pan's been on for a few minutes, I want it to be quite hot before I put in my oil. I am using vegetable oil (but you could use rapeseed oil).
While that warms up, just for a few seconds, I've chopped all my vegetables and salmon already - everything's ready to go and I'm going to put all my ingredients in now
now - my salmon and also all of my chopped vegetables. It's very important to have them chopped before you start. I'm just waiting for my salmon to change colour. My salmon is a little pink which is perfect - exactly what we want!
And I'm ready to put in the delicious flavour of this Punjabi 5 Spice, and you can already start to smell the wonderful pickling spices - the cumin, fenugreek seed, nigella seed, mustard and fennel.
This has been cooking for another two minutes and is now absolutely ready. I just want to add a good sprinkling of coriander and now we're ready to put it in our wrap. So I've already got my wrap laid out, you can warm it first if you like.
Pop a little bit of spinach in there which adds great colour, and a lovely bit of crunch, but we're also going to get a great bit of crunch from these vegetables because we didn't cook them for too long.
And you can really smell those Punjabi 5 Spices in here -- very popular in the north of India, in the Punjabi region. And I'm just going to serve it with a very simple green salad.
