On behalf of Expert Village I'm Laura Bandford. I'm going to show you how to make a delicious
Asian vegetarian entree. Now I'm going to talk a little bit about miso. Miso is one
of the three ingredients that we are going to need for our wonderful sauce that is going
to pull this Asian vegetarian entree together. This is a typical tube of miso, this is a
yellow miso. Miso is a traditional Japanese food made from rice, barley and soy beans
and it resumes at a thick paste. They're different shapes of miso and that is how they are sold.
They start from white and go to almost black, this is a yellow miso like I said the different
shades refer to how strong the miso is and how much it has been fermented. The miso is
always refrigerated because it will go bad if it's not refrigerated and sold in tubes
or in pouches. Fermentation could take from several days to several years and there are
all different types of miso, so if you look up miso or investigate miso look it up on
the internet. You'll see that there is sweet miso or salty miso, there is aged miso, smoky
miso, all different kinds of miso and it is eaten daily by Japanese. It's a paste that
goes with obviously in miso soup. It's used as a spread and used in varieties ways to
Japanese and again it's only one of the ingredients in our sauce. That is a little bit about miso
