On behalf of Expert Village I'm Laura Bandford. I'm going to show you how to make a delicious
Asian vegetarian entree. Now we are going to talk a little bit about tofu. Tofu is an
important source of protein for vegetarians and vegans. Tofu is sold according to firmness.
This is an example of extra firm tofu in the pouch, it's always packed in water to keep
it moist. That is very important and it is easy to slice it up like I'm starting to do
right in the package. That makes it really easy, you can dice it up on the cutting board
too anyway that is some extra firm tofu. Tofu is ancient, it was developed in China in 164
BC really really old source of food. It is made from soy milk, it's pressed curds of
soy milk. So what it is basically is tofu is to soy milk as cheese is to milk, it's
the same kind of process that gives your tofu as if you were making cheese and that would
be cow's milk, sheep's milk, all that. It's a really good addition to the dish we are
making cause it adds its own special tofu texture and it really soaks up any of the
ingredients that surrounds it. That is why usually you would marinate tofu cause it really
doesn't have a strong taste on its own but it's just going to take in any of the garlic,
soy sauce or anything else that you add to it. Japanese eat tofu just about everyday
so this is something that much of the world eats and incorporates into their daily menu.
Next we are going to start to steam our vegetables and really get this dish going.
