Let's talking about the Amarone Il Bosco that's the first single vineyard produced by Cesari.
The vineyards are located in Castelrotto, the wine is produced with the same vinification technique used to produce the other Amarone.
Grapes of Corvina 80% and Rondinella 20% are dried and then vinificated in the traditional way.
The research worked out from Cesari gave as result a wine with its own personality and style.
The color of this wine is a beautiful purple red with orange hints ageing,
the color is very nice and lively, with good intensity and thickness.
The bouquet is subtle, open, vertical, with a big red fruits perception,
and tendency to dry fruit marks.
We feel a lot a floreal notes, mainly pansy and white pepper
clove, a soft balsamic mark and a pleasant, full, fruit perception with a delicate undertone of vanilla.
The wine last in oak, both big and small, for 24 months and it's absolutely elegant,
well balanced with the wine, extremely harmonic with an elegant bouquet.
Shall taste it.
The body is significant, very pleasant,
this wine is round, soft tannins, very elegant.
We feel some cocoa, dense, sandy.
In the mouth the wine is consistent with an acid note absolutely palatale.
With its traditional structure and this fine acidity,
it's a wine that surely will result of great pleasure in the years to' come.
However, it is a direct wine, open, of impact, I would say complex but with immediate impact on the consumer.
The aftertaste is long, persistent intresting and pleasant.
With a very good texture it goes very well with savoury food,
like pasta with red meat ragout, cold cuts, ripe cheeses and of course venison.
My advice is to taste this wine also with not so traditional combinations, that shall be however enjoyable.
