Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
Ladies, do you have those days when you're on your own
and you feel that the only thing that will really satisfy you is a good muffin?
I know I have those days too and they're very frustrating.
So let's talk about muffin.
For my basic muffin mix, I've got 2 eggs, a 125 g or half a cup of butter,
2 cups of flour, 1 cup of sugar, half a cup of milk,
2 teaspoons of baking powder
and half a teaspoon of salt.
I'll start by adding the sugar in with the butter.
Add in the salt and also the 2 eggs.
and I'll whisk these together.
When it's nice and smooth,
sift in the flour
and the baking powder
and mix it altogether.
Once it's nicely mixed,
add in about half the milk
and whisk that in
and whisk in the remaining milk.
There's my nice, creamy muffin mix.
Once you've got your basic muffin mix, you can add what you like.
I've split mine in two and in the right half I'm gonna add 125 g of blueberries to make blueberry muffins
and in the left one I'm gonna add 200 g of chocolate chips to make chocolate chip muffins!
I'll just mix them together.
Finally, I'm gonna add in half a teaspoon of vanilla essence into each half.
Right. We're ready to bake.
I've lightly greased a muffin tin and I'm gonna put some blobs of mixture into each little hole.
You can, of course, use paper cups if you want.
It's up to you. Don't overfill them.
Now I'm ready to bake. In this side I've got my chocolate chip muffins. In this side I've got my blueberry muffins.
These will go into the oven at a 170 degrees Celsius for 30 minutes.

Now all we have to do is leave them to cool.
Blueberry muffin or chocolate chip muffin.

Hmm... For this week at least, I know I can have a good muffin any time I need one.
