hello Anne! How are you?
All good!
Awesome, what is today's recipe?
Today we will make misso sticks, which are salty
you can eat as an appetizer in parties,
anytime is a good time for this snack!
So Anne-Sophie is ready!
Gourmet Space / Secrets of the Chef
Hints / Recipes
Culinary / Gastronomy
Today's recipe comes with health flavor!
Doesn't it, Anne?
Welcome to our Gourmet Space, darling
I am crazy to hear about news.
You`ve already had the chance to be here,
you came here to explain to us about veganism
we are renovating our space here
we successfully improvised last time and
we had the opportunity to talk and learn a bit
about veganism. AS: True.
Its main outcome is health. AS: Totally.
Added to the general well-being as you are feeling
very well for eating well without hurting anyone
or any other living being.
Obviously your objective is to take care of your body
you want to last long in good conditions, don't you?
Usually, people remember this when they start losing
one the abilities they used to have without giving it
much appreciation. So, at the beginning,
vegans looked for a diet-related solution to their
health impairments. Veganism metamorphosed them
When did this start, Anne?
Do you have historical records of when vegan mentality
started? AS: In truth, we were vegan before
we were omnivorous, so, it summed it up!
It way more time than we can even picture!
So, you think that we are heading back to basics?
My mother tells me that when she was young,
it wasn't much of a privilege to have brown sugar
at home, she was ashamed of it! She said that
when her girlfriends already had crystal sugar
and refined sugar, they were more "chic"
they had more purchasing power.
And she had only molasses and brown sugar.
It was all about "Status".
Today, values are being inverted.
It is because we perceived that at the end, it gives
us health problems. It is not functional to our bodies
so we are heading back. Hold on !
Our grand parents were eating much less variety
while they were super healthy, so...
what happened? what is the difference?
we know! Today our foods are extremely processed
extremely industrialized.
And the industry, to ensure that you will remain
a faithful client, uses substances that are
highly addictive, you create an addiction for that
specific industrialized food.
It is not conscious. You don't think about it.
It is through the ingested ingredients that it happens
in your body, after you ate the product,
you experience a positive feedback, so
you keep reinforcing the habit and you will
always want more of that product without
understanding consciously WHY.
The reason why is relatively sad.
So let's head back to what is real.
whole ingredients.
The less it is refined, the best your overall health
condition will be. I can guarantee you this right now!
It is health-guaranteed! Yes.
Anne, explain to me the ingredients you brought.
So we are making salty misso sticks. Misso is
a fermented soy paste, which a very healthy product.
Among the soy products, you will generally not hear
me recommeding their consumption, much less on a
daily basis, even when you want to substitute meat.
It contains lots of phyto-oestrogens, even when it is
organic. Soy contains phytic acid that cannot be
eliminated through cooking or hydrating.
This is already another topic for another video!
There are people trying to compensate hormonal
imbalances with soy.
This is a fermented product, loaded with probiotics
(bacteria that do you good).
Nowadays, the world is so aseptic so the intestine is
poor in good bacteria, so you're prone to
inflammation, Crohn's disease, etc.
ok, I know that here, there is lots of health
Here is pure health !
Garlic. This is ground garlic, for your heart, it is
incredible.
It is an ingredient from the Gods!
And you have ground flaxseed. Brown flaxseeds here
Do not worry. Brown and golden flaxseeds do
have similar nutritional properties.
What are the active principles of flaxseed?
In truth, flax has no active principle for it is no drug.
it does contain lots of good fats, Omega 3 and 6
it is full of unsaturated fat, flax is also excellent to
eliminate free-radicals so it slows down the aging
process, and it contains lots of fiber for your bowel
movement. It is all very good.
But you have to know how to prepare it, right?
No! You throw it in your blend and powder it. Period.
Just this? AS: And I want you to do it every time
you want to use it. Why? Because flaxseeds contain
oil. When you blend it and store it, sometimes not
even in the fridge, it turns rancid.
Then, instead of being healthy, it will hurt by
oxidation and acidification. So, you have to powder it
when you will consume it.
What is the vegan hint here? Flaxseeds will
be your egg replacer. So whoever wants to start
experimenting the vegan cooking art with other
recipes, like cakes for instance, if you want to
substitute eggs with a plant-based ingredient
use one or two tablespoons of ground flaxseed
that you will soak in water to reach this texture here
it becomes a gel. This gel acts as a texturizer for
your cake.
How interesting ! Look at this !
You can actually make hair gel with flaxseed!
I can't believe this! What a woman !!
So let's agree on this: yes it is a remedy!
For this recipe, what will we need?
Basically, a little vegetable oil, may it be corn,
or sunflower. I'd recommend sunflower oil or
grapeseed oil for they deal better with heat during
the cooking process, they don't denature so it won't
be harmful for your organism.
Let's do it!
In a bowl, you put 1 cup of whole-purpose flour,
half a cup of whole-wheat flour. Try reverting these
proportions over time, it should become more whole
flour than processed flour. Eventually you could
even get rid of processed white wheat flour.
The good thing about this recipe is that
gluten-intolerant people can use any gluten-free
flour mix, corn flour is also very tasty in this recipe.
Go play with it. Quinoa flour... Invent!
2 tablespoons of misso paste, you can find different
types of misso paste at your local grocery store.
The darker it is, the more soy it contains and the less
rice it contains. Because it does contain a little rice
and salt depending on the type.
a ground garlic clove.
And I soaked ground flaxseed in water. I just put it
here for you to see how it looks like.
It's already become a gel!
Leave it 10 min, it will start becoming a gel.
If you leave it overnight, the mix will not fall from the
measuring cup!
Really? Aham !
How interesting. AS: and you add about 2 Tbsp of
vegetable oil. Patricia: I put it there myself!
I had to collaborate. We had to be helpful!
Exactly! So the last part is making the dough
At first, it seems that it will not form a dough
but use a spoon like this and add water if needed.
Always prefer filtered water in our wonderful
Brazilian clay filter.
It works very well.
True, it is just not quick enough for people
today, everything must be fast.
Look, veganism, clay filter, all this requires
a little organization and discipline along your day.
If you fill your 10-L filter in the morning, it is ok.
Anne, in the next chapter, we will be able to chat with
you, how a very carnivorous person such as you were became vegan.
Or is it possible? Is this real?
AS: yes! Totally.
It brought into your life much more health, more
Life quality. I think we ran out of time.
So, let's do this. See how time flies?
So let me finish. I will just put it in a pan and precut it
and bake it for 15-20 minutes.
The oven is alreay hot!
Stay with us, we are coming back soon and we will
taste these misso sticks and we will keep talking
about veganism. Let us taste Anne's recipe.
Look! She's already put her hand in the
dough (pun intended)! AS: It has to be!
There's no way to avoid this really.
We come back soon with more attractions for you.
2 little minutes, we're back!
We are presenting culinary and gastronomy.
It is awesome to do something delicious for you and
for the society because we're up to here with wars
aren't we, Anne? Enough of violence.
My friend! We have reached the moment we wanted
Our recipe is ready, there is another batch baking.
Won't it burn? AS: no, no.
Patricia: Are you sure? AS: Absolutely.
Patricia: Can I remove it? Look how nice it looks
There is a little more baking now and it is really
simple to prepare. AS: it is super simple.
It can be a stick so I cut it this way for your tasting
you can have this along with patés, it's delicious
but you can also use this dough for a pie or a pizza
There is no yeast so the dough is pretty dense.
But pizza do contain cheese then?
AS: No, but there are plenty of vegan cheese
recipes we can make. But this will be another time.
As I was commenting to you, I need to know,
sometimes we feel so restricted with certain
ingredients so how do we do it? If I can't use any
animal product, then cheese is an animal product
yes, it is. Cheese is really easy to substitute.
So, vegans do eat pizzas? AS: Of course!
Lasagna, pizza, cheese breads, all you want!
In truth, vegan equivalents to all your favorite
animal-based dishes exist. You just have to
understand the alchemy behind it. That is why
I insisted with flaxseed substituting eggs.
Bananas do it too, apple sauce as well!
Once you get that, you start playing with the
ingredients to create different dishes that will remind
you of the dishes you used to it before being vegan.
when you were carnivorous and likes these foods.
Let's taste it!
I will try it now because our time is almost over.
And also, I want to know the taste of this.
It gives the impression that, I will use your words,
it may give you the impression that it is a bunch
of crazy ones with a new idea. AS: yes.
and it is really not what it seems.
It is not a trend.
Exactly. This, for instance, with hummus or
babaganouj is absolutely amazing.
It does taste even better when it comes out of
the oven, I like to have it warm.
It is softier. When it cools down, it is denser.
You can add sunflower seeds, pumpkin seeds,
wonderful for people having prostate issues
you add all the seeds you want, make it exactly
as we did, do not change a thing, just add seeds.
Anne, it is super delicious, garlic gives a very
special kick, knowing about its health-rich content
it is really like a remedy if analyze it,
considering all its active principles, all the
values it has and all the other present it this recipe.
Really, it is an excellent suggestion.
Yes, it is versatile! You can do so many things!
I feel like eating the whole thing but we can't
because we're live on TV and it's rather inelegant!
Usually, it does disappear within one sitting!
Always! Isn't it true?
What about the caloric intake?
It's pretty reasonable because the amount of oil,
which is the fat element in this recipe, represents
2 tablespoons for the whole batch of misso sticks.
You won't eat all this by yourself. It tastes always
much better when shared.
So you won't ingest that much fat at all.
And also, you will eat this with a generous salad
and maybe, a green juice or a fruit
juice, do you understand? Patricia: yes.
Be aware that your fat intake today came from
these misso sticks.
And the smell it leaves in your home, it is delicious
Anne, it is pity our time is so restricted.
We definitely have a lot more to teach.
I hope it helped. Patricia: you sure did!
We loved this recipe. I, particularly, loved it.
I suggest you make this dish, if you can,
the ingredients will appear in our frontpage (FOZ TV)
if you have time to prepare, please do!
And it is possible to become a vegan, with these
daily practices, isn't it?
AS: have you seen the time it took to prepare this?
Super fast! AS: You'll feed 4 people with this.
You make a paté, also, super fast to make,
and a salad, which is immediate, and you're done.
You know, this argument that you have no time
is an excuse NOT to do it.
So people who do not feel like taking responsility
will give you excuses until the end of time.
Do you understand? It does not require more time
it is only about accepting the change, integrate it.
This requires time, and above all, education.
This way, you'll always be vibrant and nurtured.
As far as nutritional requirements, just remember,
these elements we used are whole foods, so quite
often, because they were refined, all the nutrients
present in their outer layers, are still there!
Therefore you are eating more nutrients, more life,
so there is no reason why eating vegan, you'd end
up having nutritional deficiencies, or missing some-
-thing, you know, just please educate yourself
it is not as daring as it sounds, and nowadays,
you find thousands of recipes over the Internet.
You said you liked eating meat how?
AS: Do not say this (giggles)
Patricia: eating raw meat!
In France, all meals include animal products.
As I was raised by people who ate meat, they gave
me what they thought was best, which, at the time,
for them, was animal products.
Do you miss it? AS: not at all!
Today, when I smell barbacues somewhere, so many
people drool, I feel nauseous, because, to me,
this is the smell of dead animals being grilled,
there is nothing appealing in this feeling.
Today, I am well-fed and it does harm any animal.
Why would I kill a poor animal? I love animals!
Biologist, of course!
No, I love animals too much!
Often, children ask me: You don't eat animals?
No, I love them way too much for that!
It is that simple. When this shift happens in your
head, you will start searching for alternatives.
Also, beyond this understanding, health in the first
place, becomes quite different, doesn't it?
Just try it 30 days and you will never look back!
Do it properly, and you will see how much energy
how good you feel, you will lose weight.
It is true! Ever since Anne arrived in the studio,
she's like a squirrel, bouncing around and joking
there is no down moments, there's no lack of energy
but rather, there is much energy left !
AS: yes.
Anne, this is a contagious topic, we want to know
more and more, we want to believe and search
for information, we want to share experience,
so you are summoned to come back to our program
AS: Ok, no problem.
And we end here our program for today. We hope
you liked it. Thank you, Anne, one more time,
thanks to our wonderful team. Stay with us, we
are closing here but tomorrow, we come back with
more. A big hug and thanks for being with us today.
See you tomorrow!
