I love cooking with shrimp.
It's very, very quick, it's versatile;
flavors can match with almost anything,
and shrimp scampi is something that I think is very, very popular.
I love it, I make it at home a lot.
I got a pound of shrimp here, and you can use whatever size you like.
That's the beauty of this recipe as well.
It's gonna cook very, very quickly.
So if you want gigantic shrimp, they're gonna take a little longer to cook.
And if you want smaller ones, something faster for sure.
So all I'm gonna do is very simply season these
with some pan-searing flour;
and just a light dusting is all I'm looking for.
And I have a pan with some olive oil over here
that I heated up on medium-high; so it's just starting to smoke a little bit.
And once your shrimp are ready to go, right into the pan, okay?
And what I like to do is just take a second
and sort of get them in a nice even layer.
And then I'm just gonna let the pan do the work for a couple minutes
and get 'em nice and golden brown on this one side.
Okay so I think we're ready to go.
I'm just gonna go ahead and start giving these a flip.
And they're perfect; you can see they turn nice and pink.
And that's how you know they're ready.
I'm gonna flip these over,
and then they're just gonna take another minute or two on the other side,
and we're gonna be on the plate in no time.
So they're all flipped.
I'm just gonna go ahead and turn my heat down to medium,
and these are gonna take just another minute or two;
I wanna temp 'em real quick;
I'm gonna finish 'em with the sauce, and we'll be good to go.
Okay I just wanna check the temp here; make sure we're good to go.
And we are, and that's great.
So now I'm gonna do, very, very quickly;
I've got about four tablespoons of garlic cheese finishing butter
that I'm just gonna pop in there, okay?
It's about half of one of these tubs.
I'm gonna turn the heat down to low,
and all I'm gonna do is give this a quick stir.
Shrimp are essentially cooked; you know,
you gotta let 'em rest for two minutes
after this butter's melted, but they're essentially good to go.
So all we're looking to do at this point is melt this garlic cheese butter,
and that's gonna create our sauce.
Anything you like garlic cheese butter with is gonna be great.
Okay so the butter is perfectly melted, and that's all we're looking to do;
so we've got it right here.
It's perfect; it's ready to take to the plate.
Some gorgeous, nice, creamy, saucy shrimp scampi put together,
no time at all; perfectly cook; maybe some flat parsley,
a little squeeze of lemon juice if you want to.
You got a perfect dinner; it's delicious and it's fast.
