HOT! Must-Eat Breakfast Trend No.3 Eggs Benedict
The queen of breakfasts in New York, bakery Sarabeth’s is now in Japan!
Located in Shinjuku, Sarabeth’s has caught the hearts and tongues of many Japanese.
People are lined up even on weekday mornings!
Yes, they are waiting for Eggs Benedict.
Eggs Benedict is a muffin topped with smoked bacon, a soft-boiled egg and Hollandaise sauce which is made of vinegar and rich melted-butter. That’s how it’s done!
Once you cut into the soft-boiled egg, the smoked bacon gets smothered with egg yolk and sauce - a heavenly harmony to the tongue. It’s a perfect breakfast which is hard to create at home.
HOT! Must-Eat Breakfast Trend No.2 Acai Bowl
”Honolulu Coffee,” headquartered in Hawaii, has 10 shops throughout Japan, mainly in Tokyo.
For a more simple and genuine Acai Bowl, the only two toppings used are bananas and granola.
However, this simple Acai Bowl is surprisingly rich in minerals and dietary fibers, including polyphenol, calcium and iron, that are good for the body and beauty.
This highly nutritious and healthy dish is the rave among Japanese women who are beauty conscientious. Since it is highly nutritious, acai is called the Miracle Fruit. They say it’s highly recommended for people on diets.
HOT! Must-Eat Breakfast Trend No.1 French Toast
A european classic breakfast dish, French Toast, topped with fruits and cream has long been familiar in Japan.
And now, who would have thought that a Japanese would invent a new version of French Toasts which defies conventional French Toasts.
Foru Cafe in Waseda. The latest french toast is served here.
Inside the the kitchen...
With a burner...
She has a burner in her hand! And..
The bread’s surface is golden brown.
The french toast served at this cafe is "Brulee French Toast."
As the name “Brulee” explains, this french toast is crispy outside and creamy inside.
Ms. Hirai, the owner, came up with the idea of this breakfast and it has become a hit among women.
Actually...
I am 21 years old and a college student.
Surprisingly, she’s a college student! We asked the college-girl/cafe-owner with a cute smile about the best way of enjoying Brulee French Toast...
Firstly, cut it crispily with a knife and taste it's crispy texture. Remember, Brulee French Toast is “smooth and crispy.”
All of you three in the studio, remember “smooth and crispy.”
- I want to taste it! - Me, too definitely.
All of them were interesting. What about you, Tomo-chan?
Well. Ah...first, I had Acai Bowl when I’ve visited Hawaii, and I really liked it.
This is quite popular these days. Have you tried this before?
No. I have no idea what acai is in the first place.
I didn’t know what acai is, but it turns out it's a fruit which is beared on a type of palm tree.
It tastes like blueberry.
Is that so.
A kind of blueberry?
Don’t know but it tasted like it.
-It’s made into a paste and topped with granola... -and ice cream.
Ah I see, it’s a sort of ice cream.
So you are saying it’s acai ice cream with banana and granola?
I think that's right.
-So it’s ice cream-ish right? -And sometimes it has a little honey, too.
Today we have a guest, the college-girl/cafe-owner who made the French Toast, Yukina Hirai is here! Please come join us.
Please try these.
-Oh these different kinds, aren't they? -Yeah, the colors are different.
This one is a meal-type french toast. From the right, “Chocola Banana,” “Blueberry Cheese Cake” and “French Toast with Uncured Ham and Potato Salad.”
-Let’s try these or share if we want. -Please have it while it’s warm.
It looks so cute.
It’s too cute to eat.
Which one do you want to eat?
I like the banana one.
How about you, Emiko?
Uncured ham.
Let’s enjoy it.
It's crispy!
It’s really crispy to eat.
I’ll take a bite. It's so crispy!
So crispy that we can hear the sound.
But soft inside.
Can you tell it's smooth?
Yes, real smooth.
What is special about this one?
We use fresh bananas and cut them a certain way. It’s topped with our home-made crispy almond praline.
-Yes that’s right. Like breakfast or lunch. -This one is also syrupy.
Kumi-chan, do you want to have it?
And this?
This one is a blueberry cheese cake. I’d like you to have it with ice cream, and the ice cream has blueberry cheese cake taste. Real cheese is added.
The toppings are too cute. It also comes with heart-shaped pies.
So much thought was put into its presentation as well. 00:08:22.735,00:08:31.378, -Yes, I’ve put much thought into its presentation. I’ve studied to make both presentation and taste appealing. -It’s cute.
You're right! It’s so crispy! And soft and smooth inside. 00:08:42.455,00:08:45.392, -Great! -Smooth like a jelly! It melts!
The outside is crunchy but it's soft and moist inside, and the cheese cake and blueberries blend so good together to create a flavorful harmony.
What taste is the toast?
Like french toast. It's crispy outside, and soft on the inside, but the inside is really like brulee. So yummy.
This was twice as much as what I imagined it to be! It's beyond your usual idea of french toast.
Please try this one as well.
What is this?
This is called Cheese French Toast with a completely different base without using sugar, we use garlic and salt to make it tasteful. 0:09:51.725,1193:02:47.295 So it’s like lunch, right?
What’s this black sauce?
Balsamic sauce.
It goes well with uncured ham and potato salad. I recommend you to try them together.
OK.
Yummy!
The salty taste of uncured ham is of course delicious but what makes it more perfect is the cheese flavor that spreads in your mouth and the tenderness of the potato salad.
You got so excited!
It’s not heavy.
Soaking the toast in a batter is the reason why it’s smooth texture inside?
Yes, you are right. Usually, french toast batter is made of sugar, milk and egg, but we add a magic ingredient to create this smooth texture.
-What is the ingredient? -That's top secret.
This potato salad is super yummy.
It’s like combining good parts of French toast and brulee.
I think it’s really delicious. May I ask why you thought you of make french toast?
I used to work for a shop well known for its pancakes. And I searched for "the next hot thing after pancakes" on the Internet and “french toast” came up.
I made up my mind to make french toast.
Do you manage the shop by yourself?
Now I have a staff of 15, mostly students.
You too are a student, Ms.Hirai.
Yes, I am.
21 years old? Younger than me.
That's awesome.
You know usually texture of french toast bun remains in your mouth after eating. But not this one.
-It just goes away. -Exactly!
The texture is interesting. Crispy, soft, moist and fluffy.
It feels like as if there were no bun!
No bun?
Yeah that's right. It's like "toast? brulee?"
I think this will become a huge hit in 2014!
-Really? -Emiko loves cafes.
-Thank you very much, Ms.Hirai. -It was so delicious.
