RICHARD BUCCOLA: Hi. This is Rich Buccola here in New York City and today, on behalf
of Expert Village, I'm going to show how to make a Greek sausage and vegetable bake. All
right, we're going to take our sausage, get our flame to a medium heat and put it in our
pan. All right, I got this in our frying pan. As it starts to cook, I'm actually going to
try to like break it up and crumble it so that it all gets nice and brown. That's the
trick here, just to get this all brown. Gracie [PH] always knows when we start cooking; you'll
hear in the background. All right, it's been a couple of minutes, I just flipped it. This
seems starting to get brown. Once it starts getting brown, what I'm going to do is just
start breaking up pieces like so. And what we're looking to do is get everything nice
and brown. We're going to start breaking this up into nice crumbled pieces. All right, here's
our sausage; we got it brown enough. What I'll do too is if these pieces are hard to
break sometimes 'cause they're encased in their skin, what I do is I'll just let this
cool for a few minutes and then I'll just break it up by hand, but you still want to
brown it entirely through and through; you don't want to see any pink of the sausage.
All right, like I said earlier, I'm going to probably want to break this up a little
bit smaller. So, we're going to remove it from the heat and just put in a bowl to cool.
Well, you definitely want it to look completely brown.
