Hi I'm Karen for Expert Village today we are going to make old fashion peach pie and peach
cobbler. Our peach pie would be made with a lattest top and our peach cobbler would
be made with a soft biscuit crust. We are going to start with our peach pie let's take
out all of our ingredients before we start to make sure that we have everything we need.
I have ingredients here for our pie crust and our pie filing. For our pie crust we are
going to need 2 1/4 cup of flour, 1 teaspoon of sugar, 1/2 a teaspoon of salt, 2 egg yolks,
1 teaspoon of vinegar, 2/4 cup of shorten and a 1/2 cup of butter or margarine, and
4-6 tablespoons of ice water. For our pie filling we are going to need about 6 cups
of sliced peaches. That would be about 6-10 whole peaches depending on the size of the
peaches. Now when you shop for the peaches you want to make sure they have a sweet smell,
you want to look for a nice yellow under tone, stay away from peaches that have a green under
tone and you want to make sure when you give them a little squeeze just a firm squeeze
that it gives a little. It shouldn't be rock hard and that would be nice sweet peaches.
In addition to the peaches we are going to be using a 1/2 cup of sugar, 3 tablespoons
of cornstarch, 3 tablespoons of cornstarch, a teaspoon of cinnamon, 1/8 of a teaspoon
of nutmeg and a tablespoon of lemon juice. Let's get started.
