Today, we are making "Schezwan Noodles".
Heat the oil in a wok/kadhai on a high flame.
Add the chillies, cover with a lid immediately and remove from the flame.
Your chilli oil is getting ready.
For the noodles, heat the oil in a wok/kadhai on a high flame.
Let the oil get very hot.
Add the chopped garlic.
Add the shredded cabbage.
Add the capsicum.
Add the carrots.
Add the bean sprouts.
Sauté on a medium flame for 30 seconds.
Add salt to taste.
Add the boiled noodles.
Add the Schezuan sauce.
Add salt to taste.
Toss well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
Add the chilli oil, toss well and cook for another 1 to 2 minutes.
You can store your surplus chiili oil in a bottle.
Serve immediately.
Always serve these noodles just after they are made.
