Hello everyone. My name is Tasha and welcome to Heart of Tarts.
Today on the show we will be making a romantic Swan Lake Tart.
I decided to stay away from the hearts for awhile. I am in Valentine's Day spirit with my red and white.
But I wanted to do something a little bit different. I have my red swans.
And you know swans are all kiss-y and cuddly and adorable, but anyway.
We are going to make our romantic Swan Lake Tart Today. Here we go.
We are going to start by making our old faithful oatmeal tart crust.
Preheat your oven to 350 degrees Fahrenheit. Then to our food processor, we are going to
add in 1 1/2 cups old fashion oats, 1/4 cup raisins, 1/4 teaspoon salt, and 1/4 teaspoon cinnamon.
Blend that all together in your processor until it is pulverized to a flour.
I mean disintegrated.
Then we are going to add in our liquids. 1/4 cup water and 3 tablespoons coconut oil to make it nice and sweet and fatty.
I love the good fats.
Pulse that together until it is just combined and then spread it around the sides and bottom of your 9 inch tart pan.
Bake that for 15 minutes until it is browned and dry. Then allow it to cool while we make our filling.
To the food processor again, I am going to add in two whole bananas, peeled of course,
1 avocado. This is how I cut my avocado.
I lay it down flat and I take my knife and go around the side while holding on top.
Be sure to keep your fingers out the way, because you can get hurt cutting an avocado.
An avocado is kind of like a relationship.
It looks all pretty on the outside and then you open it up and it has little moldy parts on the inside.
And just when you think that it is not that bad, you can scrap that out. You pull it all the way apart and
it is really moldy. Like deep down, that relationship is rotten on the inside.
But, like some of you. I didn't let my avocado go, because I didn't have another on to use for this recipe.
So I just scraped off the moldy part and I am going to add that to the food processor.
Just the good part. Because you know Valentine's Day is special.
You can ignore the moldy bits of your relationship for one day.
Also, I am going to add in 1/4 cup raisins to make it nice and sweet and 1/8 teaspoon nutmeg and
about 1 tablespoon vanilla extract to warm it on up. Because it is Valentine's Day.
It is nice and cozy and warm.
Now I could easily make this pudding a chocolate pudding by adding cocoa powder
to put it in the February 14th state of mind, but again, I am avoiding harsh Valentine's cliches right now.
I will wait till February hits to, you know, wrap it on up with the chocolate and the heart shapes.
Now for your apple Swans, we are just going to cut the apple in half like right underneath the core of the apple.
Set that slice aside and then I am going to set up two guide post on my cutting board.
I did get this from another YouTuber, Life Hacker or something like that. I will put the link in the description below.
Along with Chef John's version of Apple Swans to give you a little more assistance.
But, I used these two butter knives to guide me along.
You want to cut down on the right side of the core all the way till you get to the knives.
And then you want to go in from the side and make a horizontal cut until it meets that first vertical cut you made.
You should have a piece that slides in and out.
Do the same thing to the left side of the apple and then we are going to work from there.
Take the first segment that you have and put it back between the guide post.
Cut parallel to the first cut, vertical down and then turn it over to the side. Cut vertical down again to meet your first cut.
Which is now horizontal. Do that again and again and you should have these little swan feathers that kind of fan out.
Now again, do the same thing to the other segment and you should have these swan feathers that you can place on
either side and fan them out so beautiful and pretty. Everyone will be like "Oh my God, is that an apple?"
Yes hunty. It is an apple, it is delicious, and it is so beautiful. Whoa, I can't believe it turned out so well.
Next to finish off our swan, we are going to go into that whole swan. The big mass core part of the apple we started with.
Remove the stem. I forgot to remove my stem. I didn't know what I was going to do with it.
But right above where the stem is, in that huge chunk in the middle;
You are going to cut a little on the left side, then on the right side.
You are going to cut out a square, back and front. Then pop that little square of flesh out.
Now with the slice that you set aside from earlier, you are going to lay your knife across the top.
You know how it looks like a heart. Right there on the second lump of the heart,
you are going to make a diagonal slice.
Now go down about 30 degrees from that first cut and make a second cut.
That is your swan beak and neck. Now all you have to do is make a diagonal slice across the back half of the apple and
you have your swan neck and head.
You can shape it out a little bit more if you so choose. Hopefully you had some apple seeds exposed or fell out during your
cutting process and use those to make swan eyes.
Use the knife to kind of press them in nice and snug so that they won't fall out.
And, place the swan neck into that square divot that you created in the core of the apple.
Repeat this entire process on a second apple so that you can have two apples to sit up on your swan lake.
Now you can say, this is green. Some lakes are green, especially the ones that wild animals inhabit.
But we do not want it to be green, plus the avocados are going to oxidize and it is going to look brown.
So I am going to take about 6 ounces of blueberries and spread them throughout my entire tart.
I did these by hand. If I had more than 6 ounces of blueberries, like if I bought two of those little things,
I would have just dumped the blueberries out and arranged it. But, I did not have enough to be doing all that.
So I did it by hand. Made sure they were nice and neat and you want to cover the back too.
You don't want anyone to go around the back and be like oh, it is unfinished.
You want it to be pretty from 360 degrees.
So that is about it. I hope you enjoy your Valentine's Day.

and enjoy yourself on Valentines Day. Love yourself. You do not need a partner.
It is a day for love. You know, we as a society have made this day, where we share our
hearts with one another and ourselves.
So love yourself. I will be loving myself, because I do not have a Valentine's Day date and it is going to be awesome.
