Progrès cake layers
To make progrès cake layers,
you will need 350g of egg whites, 250g of caster sugar, 125g of ground almonds, 125g of ground hazelnuts and 50g of flour.
Like for making succès layers, first whisk the egg whites and add a little bit of sugar to help them get stiff.
Meanwhile, sift together the sugar, ground almonds, ground hazelnuts and flour.
Sift the mix in order to incorporate it into the whisked egg whites.
The egg whites are stiff.
Incorporate the flour, sugar, ground almonds and ground hazelnuts mix.
The progrès cake mix is ready to pipe.
Bake in a preheated oven at 180°C for about 10 min.
