Carlos: That's right and it's called Cumbia.

to find the best home cooks in America.
(lively music)
We're here in Sherman Oaks on Ventura Boulevard
where Carlos Andres Patino lives.
Carlos: Today we're going to be cooking Bandeja Paisa.
Anthony: Now this means platter of food from a friend,
from a mountain in Columbia?
Carlos: Paisa means you're from a specific area
of Columbia.
Bandeja Paisa has everything but the kitchen sink on it.
Anthony: No wonder they call this
breakfast, lunch, and dinner.
Carlos: That's right. A little pork belly,
a little sausage, pork sausage.
Anthony: Yeah, little was relative.
Carlos: A little meat.
Anthony: (laughing)
Carlos: Don't you be making fun of my tic tac.
Anthony: Who taught you how to cook?
Carlos: My grandmother taught me how to cook when I was a kid.
When the kids were out playing making trouble,
she taught me how to cook and clean.
She always taught me that you could make anything you want,
but it won't taste good unless you put love into it.
Anthony: Ah, yeah, yeah, spoken like a true cook.
Carlos: I just grew up cooking.
I used to, when I was a kid I used to
when my sister would come back from school
in college I'd make her an omlette.
I was eight years old and I could barely look over the stove,
and I'd just make her omlettes.
I always liked the kitchen.
I'm going to throw these in there too.
I also need to grab a little utensil over here.
Anthony: Utensil?
Carlos: Yeah. Well, fork I mean.
Anthony: We call that a fork.
Carlos: Yeah, sorry about that.
Anthony: In a Columbians case that could be a utensil,
but here in America, in particular Compton,
where I grew up that's called a three prong fork.
Hold on. I've always wanted to do this on camera.

Carlos: So we're going to go ahead
and put this all in here together.
Anthony: Really?
Carlos: Yeah.
Anthony: I'm supposed to eat this big chunk?
Carlos: That's true. You're supposed to eat
that big chunk. That's right. Nice and chunky.
Anthony: There's nothing wrong with nice and chunky.
Carlos: (laughs)
I'm going to show you in a minute
what the Hogao looks like.
Anthony: Is this Columbia's version of a salsa?
Carlos: It's a version of a cooking base.
That's what we use to cook with.
Anthony: Okay. Is this all right for me to eat right now?
Carlos: Totally. People do it all the time.
We use this for everything.
Anthony: That's pretty tasty.
Carlos: Any time my grandmother was going
to make this plate, everyone we knew wanted
to come to our house because my grandmother
just had that touch. We called it sazon.
The tradition was we'd always invite someone
from the church, someone less fortunate.
Anthony: Even a sinner like me?
Carlos: (laughs)
Anthony: Huevo.
Carlos: Huevos. Huevos is the last thing
we put on the plate.
I'm going to fry the egg real quick.
Anthony: Oh, sunny-side up?
Carlos: Sunny-side up.
Anthony: I like mine scrambled.
Carlos: I like mine scrambled too,
but that's the way the plate is served.
I couldn't tell my grandma, "Hey, can I get
my eggs scrambled, grandma?"
She'd be like, "You're getting it
"like everyone else is getting it."
(lively music)
Let me grab that egg and we're going
to put it anywhere you want.
Anthony: Put it right there in the middle.
Carlos: That's perfect. We're going to grab some plantains.
Anthony: Plantains.
Carlos: Then we're going to grab the chicarone.
Anthony: Why does this look like the jawbone of a T-Rex?
Carlos: It does look like a jawbone of a T-Rex,
but it tastes delish. That's the chorizo,
and then we're all set.
Anthony: Carlos?
Carlos: Yes, sir.
Anthony: In my haste to have you plate this,
I think we forgot Hogao.
Carlos: Yes, you did. I did. I forgot some Hogao.
We need some Hogao.
That's the magic. Go ahead and put this over here.
Maybe a tablespoon. You're all set.
There you go. That's what I'm talking about.
Anthony: How you do it?
I go straight for the meat.
Carlos: That's it.
Anthony: Let me get a little Hogao on there..
Carlos: Eso, eso.
Anthony: Brother.
Carlos: My man, cheers.
Anthony: Thank you for sharing this with us.
Carlos: Thank you.
Anthony: Bon appetit.
Carlos: Buon Appetito.
Anthony: Mmm. I'm going to make this tonight
when I go home. This is delicious.
Carlos: Anyone want to try this?
Anthony: I wouldn't recommend it.
I'd stab you with my utensil.
Carlos: (laughs)
(lively music)
Girl: Mic.
Carlos: So now we got the sausage
and the chicharone.
Anthony: Hold on.
Carlos: (laughs)
Voiceover: Alice are you good?
