Starting the I Could Kill For Dessert's Christmas Special!
And if you're seeing me here it's because the world didn't end!
So anyways, we're going to keep eating, making recipes and keep with the wonderful website that you see everyday.

I've been thinking of the many possibilities, of what I could prepare,
and I came to the conclusion that all Christmas recipes are made by only one person.
It's like a poor guy that is selected to prepare all Christmas recipes, and no one else does anything!
Then people arrive at the end and just eat!
Thankfully, I wouldn't be in the mood of making recipes...
Anyway, then I've been thinking...
It would be nice to prepare a recipe that at least one part of it could be shared with everyone,
and everyone could play with it a little bit.
So, we're going to prepare a Christmas Brownie!
To start this brownie we're going to:
"Put a bowl in a water bath"
"145g dark chocolate between 50% and 60%"
"100 grams of chopped butter"
"Mix it"
Meanwhile...
"Cut a baking sheet in the size of your tray's bottom"
"Stir the chocolate"
"Grease the tray"
"Place the baking sheet"
"Stir the chocolate"
"Grease the baking sheet"
"Stir some more!!!"
Here it finished melting.
We're going to turn off the stove, but we will let it sit here.
Then I'm going to add:
"45 grams of brown sugar"
"135 grams of coarse sugar"
"Mix it well"
I'm going to take it out of the water bath. "Turn off the heat"
And I will let it sit here a little, melting, until it reaches room temperature.
"Powder some dark chocolate or cocoa"
Mine is already at room temperature,
so I'm going to start adding my eggs, one by one.

The brownie's dough is a dough that you can stir too much or it will be too heavy.
So you can see that we don't have baking powder,
there are no beaten eggs that would help it grow.
It's not a dough that grows but it can't be heavy as well.
And then on this bowl over here I'm going to mix:
"90 grams of flour"
"One teaspoon of salt"
"One tbsp of cocoa powder"
"Mix it"
And I'm going to sift this flour mixture on my dough.
Then the secret is:
from this moment on you can't stir too much.
So you have to combine the flour without stirring your mixture too much.
So here's what I'm going to do:
I'm going to combine the flour from the middle to the borders, always turning my bowl.
And here's ready.
You saw I didn't mix it too much.
And then we're going to pour it over the tray that is already greased and powdered with the cocoa.
My oven was preheated to 180C and I'm going to take the brownie to bake from 12 to 15 minutes more or less.
Brownie is not a cake, so it won't bake until you poke it with a stick in the middle and it comes out totally clean.
You will poke it with a stick in the middle and it won't come out completly humid as well, with dough coming out too.
But it will come out just a little more humid, a little sticky.
At this moment, it should be ready, cause it's supposed to be a little soft in the middle.
It's something between a "petit gateau" and a cake, let's say that.
Ok? So I'm going to take it to the oven.
The brownie is baked, it was only there for 15 minutes.
It has the right consistency and I'm going to let it cool inside the tray here.
Meanwhile I'm going to prepare the Chantilly, for us to decorate the brownie after we cut it.
Normally, you prepare Chantilly using 500ml of fresh heavy cream and 4 tbsps of sugar.
But I don't like my Chantilly to be too sweet, so I'm going to add just 3 tbsps of sugar.
But you at home can use as much as you want.
That will depend on what you like.
With the 3 tbsps of sugar.
And then I'm going to whip my Chantilly until it reaches the right consistency, 10 minutes more or less.
Meanwhile, I'm going to cut the strawberries.
My Chantilly is ready.
It has a more stiff peak, can you see it? Look!
So, here it's ready!
And it's delicious!
And I'm going to...

No no, I have to make a diet.

So I'm going to take it to the fridge cause I have to cut the brownie.
Meanwhile, it cannot be at room temperature, it has to remain cold.
So I'm going to unmold the brownie.
And then, using one end of a piping nozzle, I'm going to cut my brownie.
I chose the size of the nozzle by the size of my strawberries.
So, more or less, it should have a border around it cause we're going to make a Santa Claus' hat.
So, I'm going to cut the brownie.
And then, with the scraps, you can either give it to your gluttonous husband to eat...
or you can get some mini cupcake's cup.
And fill the mini cupcake's cup.
You can mash them, no one will notice.
And here's the deal: with our Chantilly that was inside the fridge,
we're going to take another piping nozzle with a round tip, number 6.
You're going to put it inside a piping bag.
And we're going to put the Chantilly inside here.
Wow, how wonderful is that...
It's better to do like this, look:
First this little thing,
and then you put the strawberry,
and then...
you add the tip!
What do you think?
It looks gorgeous!
And to finish it, you can also decorate with Christmas confectioneries.
So, you can add some little sugar balls around, if you like.
Doesn't it give a little volume?

But you can make it minimalist also, anyway you want.

and it can look like anything you want.
