Today we are going to make palak dhokla.
This dhokla is very tasty and nutritious.
We can make palak dhokla and eat it in the morning as breakfast or during the evening as snacks.
So come, let’s start making palak dhokla.
Ingredients required for making palak dhokla.
Semolini (Suji) - 3/4 cup
Gram flour (Besan) - 3/4 cup
Palak paste - 3/4 cup
For making the paste, wash, clean and grind the palak leaves, also remove the stems.
Cut the palak finely.
Curd (Dahi) - 1 1/4 cup
Oil - 3 or 4 tbsp
Green chilly (Hari mirch) - 2 (Chopped)
Ginger paste (Adrak) - 1 tsp
Lemon juice (Nimbu ras) - 2 tsp
Salt (Namak) - More than 1 tsp or as per taste
Eno fruit salt - 1.5 tsp
Curry leaves - 10 or 12
Mustard seeds (Rai) - 1/2 tsp
Green chilly (Hari mirch) - 2 (Cut lengthwise)
Sesame (Til) - 1 tsp
Let's prepare a batter for palak dhokla.
First of all we will put curd in a bowl.
We are making palak dhokla in 2 colours
One with palak paste that is green. The other using besan that is yellow.
We will make it in 2 layers.
Firstly let’s prepare a green batter.
For this we will add ¾ cup curd to the bowl.
We will use the remaining ½ cup curd in the other batter.
Now add the ¾ cup palak paste to the curd.
Now add semolina as well.
Mix everything thoroughly.
Add a little ginger and green chilly and leave some of it to be used in the gram flour batter.
Leave a few green chillies for latter use.
Now add 2 tsp oil.
Now add ¾ tsp salt.
Mix everything well.
Now add 1 tsp lemon juice to it.
The curd that we have taken is quite fresh but if you are taking old curd then you don’t need to add lemon juice.
Mix it nicely.
Keep the batter aside for about 15 minutes.
So that the semolina gets fluffy and is ready to be used.
Till the time our batter gets fluffy, we will prepare the gram flour batter.
Add ½ cup curd to a bowl.
Also add ¾ cup besan to the bowl.
Keep mixing it till the mixture becomes smooth.
Add 1 tsp lemon juice to it.
Also add ½ tsp salt to it.
Now add the remaining ginger and green chilly.
Now add 1 tsp oil.
We will add a little water to make the batter a little thin.
We have added 1 tsp water to the batter.
The batter should have a consistency of the pakora batter.
Keep the batter aside for 10-12 minutes.
The besan will get fluffy and will be ready to use.
Both our batters are now ready.
Now let’s start making the dhokla.
Take a utensil like this which fits inside a pan easily.
Put a little oil in the utensil and make it smooth and spread the oil all over using your fingers in this way.
First we will take the green batter.
Mix it nicely.
The consistency of maida is perfect.
Now we will add 1 tbsp eno fruit salt to it.
Mix it a little.
But make sure you do not mix it too much after adding eno salt.
Our batter is now ready so we will put it in the utensil.
Now take the besan batter.
Mix it and check. It’s consistency is perfect.
Now we will add ½ tsp eno fruit salt to it.
Mix it a little.
Do not mix the batter too much.
Our batter is becoming fluffy.
Now put a layer of the besan batter on top of the green batter.
Spread it evenly this way.
Now we will cook the dhokla.
Turn on the gas.
The water inside the pan has started boiling.
Now put the dhokla on top of the stand and cover it.
Turn the gas on high flame.
Make sure the water inside keeps boiling.
We are making dhokla in a pan using a stand.
In the same way, we can also cook the dhokla in a cooker. Boil the water and put a stand below and put some utensil inside the cooker.
Same way in this utensil also, we will cook the dhokla for 20 minutes till the steam comes.
We can make dhokla in any utensil that is available with us.
If you feel that the gas is on very high flame and the cover is hurling, then lower
the flame of the gas. That is let it be on medium high. We will check after 20 Minutes.
20 Minutes are over.
Let’s check the dhokla.
Insert a knife in the dhokla in this way.
If no dhokla sticks to the knife then it means that our dhokla is ready.
Turn off the gas once the dhokla is ready.
Take out the dhokla.
Our dhokla is now ready.
Leave it for 5-10 minutes, so that it get’s cool. After that we will take it out from the utensil and temper it.
10 Minutes are over.
Now our dhokla has become cool.
Now let’s take it out from the utensil.
Firstly we will separate the dhokla from the utensil from all sides using a knife in this way.
Now put a plate on top of it in this way.
Turn its side.
We have taken out the dhokla on a plate.
We can either put the yellow side on top or the green as per our choice.
Now cut the dhokla into pieces as per our choice.
Now we will temper the dhokla.
Heat a pan.
Add oil to it.
Once the oil is hot add mustard seeds to it.
When the mustard seeds are roasted add curry leaves.
Add sesame seeds as well.
Now add the green chillies as well.
Roast them a little.
Our tadka is ready.
Turn off the gas.
Now put the tadka on top of the dhokla.
Spread the tadka on all sides using a spoon.
Palak dhokla is now ready.
This palak dhokla is very tasty.
Palak dhokla can be served along with coriander chutney, coconut chutney or moongfali dana chutney.
Store palak dhokla in the refrigerator and eat it for 2 days.
