Get your head out of the fridge and sit down, it's time for some Waeco bush cookin'. The
only way we go is with Waeco.
Now we've been driving all day. It's pretty late, but we're hungry. I've got some hungry
boys behind me here, so I'm gonna cook up something pretty quick. Pretty simple. And
I'm gonna call it corn fritters. Alright? It's very simple. Few ingredients. Not hard
at all. Let's have a look down here. I've just pre-cut it up here. I've got a bit of
bacon.
I've got some shallots. I've got some onion chopped up fine. Of course, I've got some
corn. A bit of garlic. A bit of basil and a few other little bits and pieces I'll tell
you along the way.
So first of all, whack in a bit of self-raising flour. Probably about that much. That's a
fair bit.
2 eggs. Just crack 'em, whack 'em in. Just like that. Give them a bit of a beat up there
before you mix them in. Alright, so my eggs are just beaten up a little bit there. And
now what I'm looking for is I'm trying to create a bit of a paste. Like a pastey mixture.
So I've got a bit of a batter going. Now I put my ingredients in, so I just grab 'em
and whack 'em in. Just throw them in there. Oh, we'll throw them all in. And now the whole
thing, what's it called? Corn fritters, so you better put some corn in. Like that.
And let's have a little look at our mixture here. There, that's lookin' tasty. Lookin'
very tasty. Alrighty, so I've got that little bit of a paste goin', now I'm gonna add a
little bit of a treat to it. I'm gonna put a little bit of lemon zest in. Just a little
bit of garlic. Alright, we're gonna be ready for the hot oil now. Now the hot oil's been
going over the back here. So I've got the hot oil in my pan. Not too hot. You don't
want it too hot. So you get yourself a nice spoonful of it. And whack it in like that.
Spread it out so it's thin. We just wait now. We just want that to brown on one side, then
we flip him over. So it's just a quick flip. Like that. See that's nice and golden brown
there. You don't want them too thick. You get them too thick, then they're not going
to cook inside. You want them to cook fairly quickly. And I reckon we're done. Let's get
that out. Let's stick him on the plate. Now let's get another one in there.
What I might do is I'm gonna make this one a bit bigger, but I'm still going to keep
it flat. Yep. I reckon we're ready. Let's get her on the plate.
Nice looking fritter. We'll knock that off. There we go. Have a look at there. And there
you see inside. Golden brown. Beautiful. Nice and soft inside. And it tastes great.
There you go. Quick, easy meal. Feed the animals behind me there. Keep 'em happy.
