Now I par boiled my carrots and I'm putting them in an ice bath because I want to preserve
the color. That stops the cooking cold. After the ice bath I strain them.
I've strained the carrots. This is my serving bowl. Look how pretty, bright and orange the
colors are. Put my dressing on top, mix it slightly. Look how lovely that is, the green
fresh parsley, the garlic and the bright orange of the carrots. It is absolutely scrumptious.
I am going to taste one. Oh unreal! The lemon brings out the flavor. You have to try this.
