Okay, we are going to take our Mac out, set a little towel down so we don’t burn our
covers off and now we are going to plate. This is where it uses its Mac and Cheese in
“Cheese my Mac and Silky Roman Meatballs” style. So I am starting out with just a silly
old biscuit cutter and I am doing a big portion, I would normally do a little smaller portion
but I am figuring you might be serving a big strong man or a big strong woman. The idea
here is to let this just sit for just a second, grab a spatula, get up underneath my Mac,
there we go and I always sit it in the center of the plate, you want your focal point to
be the center of the plate. You can always play around the edges with sauce, but keep
a nice clean focal point. Wow and our meatballs, I am actually going to do these right with
my fingers, slide one here, slide one here, and I think just three of these will be just
fine. Right and now I’ll grab a spoon and take a little bit of my sauce, this is that
great demiguise reduction, just the tiniest bit, I want that meat to be nice and glossy.
Um, um, um, um, um, um, um, oh I wish you could taste this, there is a little crunch
from the pasta and then a little crunch from the meatball and then a soft silky center
and then a little bit of bite from the Gorgonzola and then we have a little bit of sweetness
from the wine, it is heaven. I say you can kiss my Mac any day of the week as long as
you do it with silky Roman meatballs. See you next time, come on and have some.
