Hey my Sweet Vs, its The Sweetest Vegan here. Today on the show for the Southern Queen of Vegan Cuisine Project
we will be making Florida Lemon Bars. Here we go.
Food and Dessert: Vegan Lemon Bars - Lemon squares Recipe
We are going to start this recipe by zesting one orange in to a bowl.
To that bowl, I am going to add organic powdered sugar, all purpose flour, whole wheat white flour,
and vegan butter.
Just take your wooden spoon and chop your vegan butter into the flours and powdered sugar.
I am going to add that mixture to a lightly greased 8 by 8 inch baking pan
and press it down with my finger.
Be sure to get it up in the corners and everything like that.
Bake your lemon bars crust for 15 minutes in an oven that has been preheated to 350 degrees F.
While that is baking we are going to make the filling.
Juice one orange. I have this nifty little juicer cup attachment thing going on here. I love this thing.
Pour the juice into a large bowl and add in EnerG egg replacer mixture.
Ener G egg replacer can be a little difficult to find sometimes. I know you can find it in Whole Foods or order it offline.
I am so sorry I do not know what to replace it with, but if you know, please leave it in the comments below.
Whisk together the egg replacer and the orange juice and then we are going to use the same nifty juicer to
juice our lemons. Im going to add in the juice of the lemons, whisk, and add in applesauce.
And that is going to give us some extra fruit pectin and make it all nice and custardy.
Once your crust is finish baking, you are going to take it out, pour atop your filling and put it back in the oven for
25 to 30 minutes.
Once it is done, your filling should be gelled, even though it will still be a little jiggly.
Let it cool before cutting it into squares and topping it with confectioners sugar if you wish.
Lets taste it.
I made a lemon bar before and it was not this good, see what happens when you are persistent and you keep trying and trying
even though people tell you that you can not be a vegan baker.
But it was so good. It was tart, it was sweet, the crust did not taste like a sugar cookie.
I don't know how to explain the crust. The crust was like butter-y and sweet and citrus-y
and I loved it.
