Hi, this is Stephanie Manley with CopyKat.com. Today, I'm in part of a
virtual cookie exchange, and I'm making double chocolate magic bars. Hang
on to the end to see what Noreen and Rocky are making. I am going to start
with one and a half cups of graham cracker crumbs, and I am going to add to
this, a half of cup of melted butter. That's one stick, or one quarter
pound of butter. I can convert it already. We are going to also add some
chocolate chips, and since they're double chocolate, I'm going to add in
white chips as well. You're also going to need a seven-ounce package of
coconut. Then you're going to need some nuts.
Now, since I'm in Texas, I'm using pecans. But walnuts and almonds also
work well. And I'm going to also use a can of sweetened condensed milk. You
can buy a store brand. It works really well for this recipe. So, go ahead
and melt your half a cup of butter and stir it in to your one and a half
cups of graham cracker crumbs. Get them mostly moistened. Don't worry if
you don't get it exactly done. It's going to work out. Put a little bit of
non-stick spray in your 13-by-nine-inch baking pan, and go ahead and just
drop that crumb mixture into the pan. It may seem like you don't have quite
enough, but I promise you, you do. You'll just need to take a couple of
seconds to pat out these cookies into the pan.
So, just gently pat them out. Just take a couple of seconds. It will work
out, I promise. Now, I really love to make these cookies because well, they
taste good. But also, they're so easy to do. And growing up, we had these
pretty much just for the holidays, because there was always something extra
special. Now, I am going to add about a half of a bag of chocolate chips.
And here, it's a little bit over one cup. I'm also going to use white chips
in here, but you know what? This goes well with butterscotch chips, peanut
butter, and sometimes during the holidays, Hershey's has cinnamon chips. So
you might want to grab some of those.
And next, we're going to add a seven-ounce bag of coconut to here. Now, I'm
using the sweetened kind. You can use unsweetened coconut. Either will work
just great, I just happened to pick up a package of the sweetened kind
because it was on sale today. All right, so after we get our coconut in the
pan, we are going to put in our nuts. And then, we're going to simply top
this with our sweetened condensed milk.
And these are really, really easy to make. You just need to bake these in a
350-degree oven for about 35 to 40 minutes. They're going to come out
wonderfully golden brown. And then let them set for about 35, 40 minutes,
before you cut them and take them out of the pan. And you are going to have
yourself some fabulous magic bar cookies.
