Hey guys this Made in Georgia Peach Cobbler requires the following:
1 cup All-Purpose Flour
8 Peaches, peeled, pitted & sliced
1 cup Red Raspberries, optional
1/2 cup White Sugar
1/2 cup Brown Sugar
1 tsp Cinnamon, ground
1 tsp Vanilla Extract
1 tsp Lemon Juice
1 Tbsp Cornstarch
1 tsp Baking Powder
1/2 tsp Salt
6 Tbsp Unsalted Butter, chilled & cut into small pieces
1/4 cup Boiling Water
In a large bowl add your peaches
raspberries
4 tablespoons white sugar
4 tablespoons brown sugar
cornstarch
1/4 teaspoon cinnamon
vanilla extract
and lemon juice
stir to combine fruit and other ingredients until coated evenly
put the fruit in a large pot or saucepan
simmer on medium for 15 minutes
stir occasionally
preheat oven to 425 degrees F
In a medium sized bowl, add flour
baking powder
salt
4 tablespoons brown sugar
4 tablespoons white sugar
and butter
blend with your fingertips until it has a coarse consistency
carefully add the boiling water
using a spoon, stir mixture until just combined
spread out the dough to cover the bottom of a 12 inch cast iron skillet
add in your fruit / spread it out evenly
mix the remaining cinnamon and sugar together / sprinkle on top
bake in the oven for 30 minutes
when finished, it will look like this!
Georgia peaches are the best for this recipe.
Unfortunately, it's March and peaches won't be
in season until July or August.
But I can't wait.
So I'm making this recipe with store bought peaches.
