Hi, I'm Angela Webster, your Resident Chef & Health Foodologist and today I'm going to show you how to make Kale Chips.
These kale chips are vegan
raw
and they're gluten free, dairy free, soy free, sugar free and non-GMO
They're a great snack to have that's healthy and gives you that fix for a chip. So, the first thing
I'm going to do is juice half of a lemon, half of an organic lemon
of course
with this nifty juicer
citrus juicer.
And that gives us about all the lemon juice we'll need for this recipe. I'm going to cut about
half of this pepper
Red bell peppers
a cup and a half approximately
of cashews that have been soaked and dehyrdrated into the blender.
We only need one quarter of this organic onion so I'm going to chop it up right now.
Here we go. Into the blender.
Our freshly squeezed organic lemon juice, right into the blender.
Okay so.
Now we're going to use this wonderful contraption to take this skin off.
And voila! One skinned piece of garlic.
This part is optional. I go ahead and mince my garlic before I put it in the blender
but you don't have to because I guarantee you, that thing is going to tear it up.
oh no, don't put me in the garlic mincer! No!
Ooh! There it comes. Now this is one
utensil
you really don't want to go cheap on because the cheap ones can never
actually do this.
Now, we're going to spice it up! Okay? Spice time!
This dish is really liberal. Go less, more, whatever you want. We're going to use
1 teaspoon of cumin, 1 teaspoons of onion powder and 1 1/2 teaspoons of sea salt.
So here is the time that you would add in any Cayenne pepper or if
you wanted to add any habanero peppers or ghost peppers or jalapenos.
This would be the time to do that.
Mix this up.
1 teaspoon raw organic tahini
Okay.
And then the spices.
Yeah, we like to spice it up over here.
One quarter cup of filtered water into the blender. Here we go.
Everything in the blender.
Lid
on the blender. Turn it down to a lower setting because if you start it out
at a high setting, it's going to go everywhere.
So, now it's really important to taste it and make sure it's the flavor that you like. Let's see where we're at.
That's good. Now I've got this nice fresh bunch of curly kale.
So what I like to do
is I like to pull the kale leaves off, save this guy, because I can use this
later
to make vegetable stock.
All these guys in here.
And we'll put it in the freezer until I'm ready to make soup. We do this a lot.
Now, I've got my nifty salad spinner.
We'll be using that part later.
I'm going to break the kale up to the size I want it which is about
the size.
Beautiful, we love it!
Yeah, we love kale!
This is going to be so good!
And there we've got the kale.
Now we're going to soak this in water
and give it a good rinse.
I let this get pretty full and then I swish it all around. Get a nice good rinse on it.
This kale goes into this strainer.
Here's your chance to exercise your muscles.
Get rid of the excess water. All right, this kale is ready to use.
Put the kale in the bowl.
And at long last it's time
to marry our kale with our cheese sauce.
This is a good time to tell you to remove any rings you may be wearing because you're about to get
down and dirty.
You're going to start to really massage your kale.
Really get to know it and
work it all together.
Let your kale guide you.
The onions are making my eyes water.
All right.
Nice coat on the kale chips, leaves, cheese and the kale look very
happily united.
So now we're going to lay the kale chips out
on these trays here. Spread them out
so they get nice and crispy.
Here we go.
So now, we're going to take the kale chips and put them into the Excalibur,
the only way to dehydrate, also known as
the Kale Chip Hotel.
All right, we're going to leave them in the incubator for about 24 hours so they get nice and crispy.
And we'll come back and check on them tomorrow.
I'm going to put them at a 115 degrees
so that
none of the live enzymes get damaged in the process of the dehydration. Bye!
Okay! The time has come. The 24 hours is up and it's time to test out our kale chips.
The moment of truth
that we can never get to soon enough when these bad boys are in the dehydrator.
Dun dunnun dunn!
Let's see how they are.
Oh my god, yeah.
These will make a believer out of anyone.
Awesome!
Crunchy like a chip, cheesey like a Dorito.
I'm taking these to the party, baby.
Here we go!
