Welcome to Ahmets Kitchen, today we will be making filled spiral with walnut
this is what we need:
we have
a glas of lukewarm milk
in here
a glas of lukewarm water
half a glas sunflower oil
a spoon sugar
and yeast (42g)
let's make that small
2 eggs
the eggwhite

seperate it, ok
the egg yellow in here
stir
until the yeast is dissolved
now it's dissolved
the yeast
add a teaspoon salt
stir again
now flour
the flour has to be screened, I use 405er flour for that
add it in here
as much flour as you need
until the dough is firm
we are getting somewhere
a bit more flour
you don't have to make this much dough, you can of course only make half as much
this is almost a Kilo of flour now
this has to be a firm dough, still need a bit of flour
it's good and should get firm
cover it
let it rest for 30 Minutes, let the air out
now the contents for the spirals
these are 200g of pressed walnut
50g milled almonds
50g brown sugar
cinnamon
a teaspoon
stir, done
let's begin with the dough after 30 Minutes
as you can see, it's gotten double in size
let's get it out
then continue
now half it
put one half aside
make it round again

let it rest for 3 Minutes
let's continue
press on it with your hand
let's roll the dough

now the filling

let's cut it now it's rolled
this is almost a Meter long
now cut it like this

egg yellow on top, I put a spoon of Milk in
2 egg yellow
let them rest for 10 Minutes, then put them into the oven at 180°C
they needed 15-20 Minutes
let's get them out this is how they look

I made these bigger and thicker
