To show you the Delicious Flavors of Morocco
We are continuing with My Grandmother's comfort food recipes
So far, I shared with you her Hash brown potato recipe
and also her Moroccan Rice Pudding Recipe
and this week, we are going to make pasta, my grandmother Style
Pasta is the ultimate comfort food
Yes, I Love it . . . I love pasta
and of course, you are going to say Alia's pasta is Italian?
Yes, it is Italian and all of recipes are everywhere Italian
But everybody in the world eat pasta.
At least, almost everybody in the world eat pasta. Including in Morocco we love pasta
We usually eat it
So the one I am going to show you today is my grandmother's Recipe
She actually cooks pasta with pasta sauce and adds her own little touch on it
And then she covers it with cheese and bakes it
That makes it amazing!
You are going to see that so let's start…
Cut the onion into two, slice each half, then thinly chop it.
Do the same with the tomatoes… no need to peel them, just chop as is.
In a pan drizzle some olive oil and heat on medium heat.
Add the onions, mix well, sprinkle some salt, and cook for a few minutes until the onions become translucent.
Add the crushed garlic, mix well, and continue cooking for another minute.
Now, add the chopped tomatoes, mix, and cook for around 5 minutes.
Finally, add the pasta tomato sauce (any kind you like).
Once you empty the pasta sauce bottle, fill it with a little bit of water, shake.
and pour in the pan, this way we get every bit of the sauce plus some water too.
Cook uncovered for around 5 minutes.
Add salt and pepper to taste
and a pinch of dried thyme, the secret ingredient of my granmother
just a small pinch, otherwise, it will have a bitter taste.
our sauce is ready.
In the meantime, boil some water with salt and a little bit of olive oil.
Break your spaghetti in half
and cook it in the boiling water for around 10-13 minutes (follow the instructions in your package)
Drain the spaghetti when it’s cooked, and add it to the tomato sauce in the pan.
Heat for a few minutes on medium heat.
the Final Step, Place the pasta in the baking pan and cover with grated cheese.
Yes, lots of grated cheese… that’s also my grandmother’s secret ingredient!
Bake for 10 minutes in a pre-heated oven until the cheese has melted.
