My name is Mark Panizza and I'm the Chief Executive Officer
of the Dardanup Butchering Company.
The old skills, the old primal boning,
the old slicing skills are being lost
so as a retail butchering enterprise, we needed to retain those skills
so the only way was to make sure we invested in our apprentices.
The company started up a policy
where we would train our own apprentices internal
and also look at mature age apprentices.
CRYSTAL POTTER: It's a huge benefit for DBC
because we can train them how we want them to be skilled.
You know, they can come with us with a clean slate.
And we can develop the skills which we would like to see in them.
Everyone's great, the way they demonstrate things is down pat.
It's understandable. Made me want to keep going and move on.
We don't see training as a cost, we see training as an investment.
To see the young people come through now,
from nothing to where they are today,
is a fantastic achievement.
Our training system here is that good that we have other places now
who are sending people here.
CRYSTAL: It was a huge honour to win the Employer Award,
to actually be recognised.
If anyone wants to consider an apprenticeship or a traineeship,
they should just go straight ahead.
