To remove the meat from your lobster tails, first--there's several ways you can do it,
but I'm going to use my scissors, actually. And I'm just going to cut down the very center
of the lobster with my scissors. I like to use scissors, because it makes it a little
bit safer. You cut all the way down, and then with your hand, you can easily just bend back
a lobster, and you break the bottom, underside of the lobster here. And now, all you can
do is peel this back, peel back the shell and it exposes your full lobster tail. Now
one thing you do want to keep in mind is that there is the digestive tract down the center
of this lobster, so I'm just going to open him up, and make sure that I remove this digestive
tract. Don't want to eat that. You'll notice that there is some green stuff around the
top of the lobster tail, and that's just the tomalley, and it is edible; you can eat this.
Or if you don't like it, you can just rinse it off. And that is how you remove the meat
from the lobster tail.
