Walter: Somebody must have told you that it's almost Cinco de Mayo, didn't they?
Woman: You know, I guessed it. I really did.
Walter: You're so clever.
Woman: We decided we're going to make some chicken enchiladas. Is that all right with
you?
Walter: Oh,no, it's better than all right. Because they smell so good, and they look
so good, and they have all this stuff in them I like.
Woman: Well they do, and this is so easy. And this goes together in a flash. And all
I did was got a couple cloves of garlic and a jalapeno that I minced. And then one of
those little cans of chilies, and an eight-ounce package of cream cheese.
Walter: Okay.
Woman: That's all that's in here.
Walter: And you just softened the cream cheese and stirred the other stuff into it?
Woman: Stirred it all up.
Walter: Yeah.
Woman: So I've got chicken. Howard, you know if you want to go heavy on it, I think I used
about four cups.
Walter: Okay.
Woman: In the original recipe. I think I got stingy today. That's not four cups.
Walter: That's close.
Woman: Yeah, it's close. And then we're going to give it some Monterey Jack cheese.
Walter: That's a big surprise.
Woman: You can also use pepper jack, if you're cooking for not babies.
Walter: Yeah.
Woman: And you can use more jalapeno if you want to. Now the rest of this is going to
go on top.
Walter: Top, yeah.
Woman: Right. So we're also going to give it a shot of chicken broth.
Walter: Because if you put too much, it's not going to be able to roll it up.
Woman: That's right. And a little salt and pepper.
Walter: See, I know this stuff.
Woman: Doing pretty well there, Walter.
Walter: Yeah. Well at least in seeing, I know about this...
Woman: I know. Can I trust you to stir this up for me?
Walter: I'll try my best.
Woman: All right. Now, you know, I like whole wheat tortillas, but because this has got
so much "blonde" ingredients, I thought this would be pretty. So I got the spinach tortillas.
Walter: Yes.
Woman: Right? And these, right behind me I've got a 350-degree oven.
Walter: Okay.
Woman: So let me show you how easy this is. Now, when I'm going this, I'll go ahead and
turn our heat down.
Walter: Okay.
Woman: I use a slotted spoon so that I don't get the inside too wet.
Walter: You may turn out to be really clever. Uh-huh, who'd a thought it?
Woman: About two spoonfuls for each one.
Walter: Okay.
Woman: Because all that wonderful creamy, cheesy sauce that's left over...
Walter: You're going to pour over the top.
Woman: I'm going to put it right on top.
Walter: You're clever.
Woman: So we roll all these guys up.
Walter: Yeah.
Woman: Get eight of them in here.
Walter: Uh-huh.
Woman: Pour on our cream. Or you can use evaporated milk. I did last night. It was great. Any
leftover sauce, right? And they're going to go in for half an hour.
Walter: Okay.
Woman: 350 degrees. And I didn't put it in the recipe. You don't have to do this, but
I just thought it was pretty. I have a little chopped cilantro.
Walter: Yeah.
Woman: All right. And that's what we end up with. Can we see it? Here we go.
Walter: See, the wonderful thing about all this is that it is simple. It is good.
Woman: That's right.
Walter: And it looks pretty.
Woman: Well and this will, I mean, I can tell you from experience, the children love it.
And if you've got teenagers, they will polish off two of these between them, easy, no problem.
Walter: Yeah.
Woman: But this will feed about six people. It's perfect for a celebration. Did you bring
the margaritas?
Walter: You know I'm a teetotaler. You know I don't even stand close to people drinking
margaritas. Wasting away again.
