Hi! We are back and showing you how to break down sections of the snow crab. We had a whole
snow crab actually which was steamed and had been chilled down for us. I've broken off
the head and the body and that's all gone. What we have left here is what they refer
to as dead man's fingers which is actually gills, lungs however you want to refer to
them so those need to be pulled off simply because we are not going to eat those guys.
So those are taken off of both sides and I just pulled those with my fingers. I'm going
to take this front claw actually and just kind of break them off from the body. Now
there is meat in the body of the snow crab like this; it's just a little harder to get
to as you can see. So we are just going to kind of clean around it as far as that goes.
Some people like to just break the arms or legs if you will with their hands manually
and that's fine too. I tend to try to use culinary shears of this type or we can also
use some lobster shears that have short stubby blades but they are a little bit more firm
and have some backbone to them. So we'll cut through these guys and I am really just cutting
deep enough to get through the shell and I'm just going to go down the length of the leg
being careful to watch my fingers of course. I'll come back from the back side here which
is the portion which is the closest to the body and cut all the way up that way. So we've
got one straight line there and now I can just separate these guys with my fingers.
There you can see the wonderful claw meat and leg meat as well. As you can see this
pretty much just pulls out nice and gentle with your fingers. So that is just one leg
and a claw and with these guys with the regular legs, they are quite a bit easier. Just going
to pull that. This is what you want to remove because no one wants to eat that. All we have
left is nice crab meat in this claw here and this is what you'll do for the rest of the
legs to be honest with you. Just cut that open like I did, separate that nice and easy
and just push that out with your finger and there's some succulent crab meat for you.
So hopefully that helps and that is a whole steamed snow crab from start to finish.
