Our smash burger recipe takes all of three minutes. It's one of the best burgers we've
ever had. And you can cook it with us step by step right now on Appetites®. One pound
of beef, 4 slices of American cheese, two onions, one tablespoon of butter, four hamburger
buns, pepper, salt, ketchup, your favorite condiments, mayonnaise, mustard, and four
teaspoons of vegetable oil. Slice one of the onions in half through the root end.
Then lay the halves down on the cutting board. Slice each half into thin half moons.
Dice it. Nick prefers raw onions, and I like them caramelized, so we decided to split the difference
and do both.
Using your hands, divide the one pound of meat into four equal balls. You want to handle it as little as possible so it doesn't get tough. Each ball is about four
ounces.
Okay now let's caramelize some onions for Blake's burger, he's making me do this. First turn the heat to medium and add the butter to the skillet.
Once the butter is melted, add the onions and stir until they begin to caramelize.
Stir occasionally, this should take ten to fifteen minutes.
When the onions are nicely caramelized, turn off the heat and transfer the caramelized onions to a bowl. I hope he likes these.
Using the same skillet as the caramelized onions, turn the heat to medium and add one of the buns, cut
side down. If you're not making caramelized onions, add one tablespoon of butter to a
skillet. Melt over medium heat and then add the buns. Toast the buns for about thirty
seconds. You should move them around occasionally so they don't burn.
Repeat with the remaining buns. Turn off the heat and wipe out the pan with a paper towel.
Right before you begin, salt the meat on the top. Turn the heat to high on the iron skillet and let this warm
up for a few minutes. Add about one teaspoon of the vegetable oil and then tilt the skillet
so it coats the bottom. This would be an excellent occasion to turn on any fan you may have in
your house, open all windows, and get ready for the smoke. Immediately transfer one of
the balls of meat, salt side down, to the skillet. Let this cook for one minute.
Salt the meat on the top.
Using a spatula, flip the burger and smash thoroughly until it's flat. Sprinkle salt on this side of the burger. Let this cook for another minute. Then flip.
Add one slice of American cheese and let it cook for one last minute. Repeat this process
with the rest of the balls.
