Hey guys Danny from Danny Mac's Kitchen What's going on?
So you know I love my parties and you know I love my party food
and I love sharing it with you I have something really spectacular
for you guys to check out Especially if you're having a big party
and you need to entertain a lot of guests I've got something for you
I'm talking about shrimp and artichoke bruschetta with roasted peppers and
a little bit of avocado Your guests are absolutely going to love this
So what are you waiting for let's get to it So I need you to gather these items
to put this together First we need some shrimp the
star of our show, I have 1 pound of shrimp chopped
1 small onion diced We're using artichoke hearts these
are jarred, they've been drained from all their water, make sure you drain them
well These are chopped as well
2 ounces of garlic 3 ounces of roasted peppers
We're using olive oil, a couple of ounces 3, 4
3 ounces of havarti cheese Use whatever cheese you like
White cheddar works well so does Mozzarella 1 avocado
1 bunch of scallions chopped and 1 loaf of italian bread
Go ahead pre-heat your ovens to 375 degrees Let's prepare the base of our bruschetta
We're going to bake some Italian bread with a little bit of olive oil
Let's make some nice sliced rounds Not too thick
You're looking for something like that You want these to be for individual portions
A lot of times bruschetta can be bigger Doesn't matter, this is what we're looking
for because we're having a large party
Prepare a foil lined baking sheet Take your rounds lay them out evenly
Across the whole thing Get a really good quality olive oil
ready as well and we're just going to brush them and
season them with a little salt and pepper See what I mean? We're going to make a lot
Goes a long way Pastry brush, a little olive oil
Really get them nice and coated Get's a lot of awesome flavor
Season with fresh ground pepper and a little bit of salt
not too much and bake in your pre-heated oven
for 7 to 8 minutes I have heated 2 ounces of olive oil
over medium high heat for about a minute and a half
I want to sautee these onions with the garlic together
Good and coated Cook for about 2 to 3 minutes
Until nice and soft, translucent At this point we got this rocking
brown color going on Add the roasted peppers
the artichokes and the shrimp We're going to cook this for
5 to 6 minutes Make sure you get everything coated
Until the shrimp is totally cooked Also give it a good seasoning with fresh pepper
Make sure you really give it a lot of good pepper
Give it a little zest and some salt Shouldn't take any longer than 5 minutes
Been about 4 or 5 minutes Turn your heat off
At this point add scallions I like to add them last because they
retain their color and crispiness and also add the cheese
and we're just going to mix this in and we're going to allow it to cool
The cheese is going to melt it's going to be like a binder
and everyone loves a little cheese So, yeah, this looks rocking!
Definitely let this cool down 5 minutes
So I decided that I wanted to use a little fresh avocado for garnish because
I love avocado and it really compliments this really nicely
I wanted to show you guys real quick how to cut it open and cube it properly
like really, really easy Palm your avocado
with where the stem was on top Take a knife, of course you don't have
to use a ridiculously large knife like this (laughs) but this is what I'm using
Cut down until you can't cut down anymore because there is a huge pit there
and just follow around the circumference of the avocado
Just like that You know what? You're going to meet up
exactly on the other side Perfect!
Now we can open her up Perfect!
You're going to have this pit in here You can do 1 of 2 things
You can either spoon it out or you can just take a knife and pull it out like
that Now, I want fine dice so I got
a much smaller knife and I'm just going to make vertical incisions
Just like that Being careful not to go through the skin
and slice your hand open because that would be a terrible waste of an avocado
Flip it around, go the other direction Now we have dice as you can see
they are starting to form and we're just going to grab a bowl
and a spoon and we're just going to spoon this out
Look at that Perfect!
Perfect little dice Do the same for the other side
Takes 2 seconds Let's make a nice little plate for our friends
to pass along, enjoy this amazing appetizer Put some of the mixture right on top
of the bruschetta bread We're going to top it with a little
bit of avocado, as so and I'm just going to garnish it
with an additonal scallion just to make it look pretty
and we'll make a whole bunch of these I'm telling you, your guests are going to
love you So easy to make
A little avocado Mmm!
So I'm really just serving this on a bed of mixed greens with some endive
a little lemon, some tomato Make it colorful, really stand out
Because as you know I'm all about presentation right?
Yeah, this is a winner, this is a hit Everyone's going to love this
How can you not like shrimp and avocado? Mmm! and some people don't, I don't get it
but whatever to each their own and we'll just start with this
this is a really great presentation and I'm absolutely loving it
So I only have one thing to say to you guys You better be inviting me to your party
if plan on making this appertizer because it absolutely rocks!!
