Hello and welcome to Todd's kitchen. Todays recipe suggestion comes from the following youtube user and he also

So todays recipe, is it a potato or is it a donut
well to be honest it is a bit of both. So join me today as i make my version of spud nuts / spudnuts
Im going to start of this recipe with the most important ingredient, the potato
So with a pot of boiling hot water just place in
our potato
and let this boil
for about
fifteen minutes just until it is nice and tender
now you can tell just by sticking a fork through and it goes through nice and easy
which means its ready
So while the potato is cooling, into a jar
with
warm milk we will place in our dry active yeast
give it a good stir
and it should take about ten minutes to activate. next into a mixing bowl
pour in out water
then our olive oil
you can also use vegetable shortening or meat shortening if you like
but personally i prefer the olive oil
and then our sugar
Now using a hand mixer or a stand mixer we are going to mix this just until the sugar is
completely dissolved
now that the sugar has dissolved we are going to place in our mashed up potato
our salt
and our yeast mixture
then crack in two eggs
then some ground nutmeg
then mix until well combined
Now that it is mixed in we can add in our all purpose flour
If you don't have a stand mixer just use a wooden spoon to mix it in
other wise you can use a dough hook and mix this until it forms a nice dough
and its mixed. It will be a little bit sticky and thats just how you want it
Next we are going to cover it up with some
plastic wrap
and we are going to let this sit here for about forty minutes and in that time it should double in size.
As you can see it has now doubled in size
Next flour a chopping board and place our dough on top
Lightly flour the top
and with a rolling pin
flour that as well
So now just roll it out
You want to do it until it is about that thick
so about
a quarter of a centimetre
next im going to use a donut cutter. Now i don't expect everyone to have these.
I just found this online.
but if you don't have one what you can use is a cup
to cut out in donut as so
thn using a knife to cut out
the middle bit
So now im going to put this on some non stick baking paper
So once we have all our spudnuts make up
give it a quick spray over the top
just with some cooking spray oil
Then cover them up with some more baking paper then let them sit here until they double in size.
Now that out spudnuts have doubled in size. Now for this im going to use a deep fryer
because it works out so much better
I have it set for one hundred and ninety decrees Celsius
so pout your spudnuts into the basket
and lower them right in
It should only take about two minutes to cook
So after about a minute we will check the first side
and once its golden brown we will flip them over and cook the other side
So now their ready to turn over
Its just a simple matter of using some tongs
just to turn them over
and we are going to let these cooking for about another forty seconds
just until they are nice an golden on the other side.
As you can see they are nice and cooked on the other side
So its just a matter of pulling them up
then we will let them drain for about twenty seconds then put them on a plate
and just continue on until they are all done. Now next into a bowl we are going to place in two cups of icing sugar
or confectionery sugar
then one tablespoon of vanilla extract
and next i have some boiling hot water
now add a little at a time
and mix it through until we get a nice thick paste
Now the final step is to grab our spud nuts
and we are going to
role them in this
glaze mixture
and drain them of and place them on a plate
And they are done and they look fantastic
they are very similar to normal donuts
but with a twist
but enough of that, lets give one a try
oh man thats so good
that has a very light and fluffy texture
with that glaze on top it tastes like a lovely sweet donut and with the potato in there
it does add a distinct taste and it works
it really really does. These spudnuts taste simply delicious.
Now i challenge everyone to give these a go at least once because they are worth it they really are
