On behalf of Expert Village I'm Laura Bandford. I'm going to show you how to make a delicious
Asian vegetarian entree. In this segment I'm going to prepare the peppers for steaming.
I've chosen a nice red pepper, peppers are great in this dish because they add a lot
of color and you can do multiple color peppers, that would be really nice too. In this case
I'm just doing red, they add color and add crispness. We are not going too much of the
way of steaming them we want them to stay nice and crisp but they will be steamed a
little. So this is how we prepare a pepper, we're going to slice off the top, slice off
the bottom and we can cut those up too so you can get as much peppers as possible. Then
slice it like that and open it up and you see all these ribs in there. You want to get
all the ribs out and the easiest way to do that cause they are kind of flabby, you really
don't want those. I'm going to cut those into segments and it's easier to get in there with
my pairing knife and just slice off the rib like that. This doesn't have any and this
does; I'll turn it this way so that you can see you don't want to lose too much of the
pepper.
This pepper is unusual in this and that it almost didn't have no seeds, that is a little
weird, huh? Then I'm going to slice them into strips like that and that is how you clean up a pepper. In
the next segment we are going to prepare our broccoli and our sweet potatoes, hope to see
