My name is Michelle Lampi and I'm a dietetics
graduate student from Eastern Illinois University.
Today, I am going to talk to you about healthy living
with celiac disease.
The purpose of this presentation is to increase the awareness of
celiac disease and to inform those with celiac disease
that it is possible to live a normal and healthy life
with specific dietary modifications.
Celiac disease is a digestive disorder
affecting 1 in 133 individuals.
So it's probably more common than you think.
It's characterized by the inability of the small
intestine to absorb gluten in the body, leading to an
intolerance of gluten and malabsorbption of nutrients.
Gluten is a protein found in barley, wheat, and rye and
can also be found in products such as lip balms,
medications, and vitamins.
So you should always be aware of the ingredients in the
over-the-counter products that you purchase.
Some symptoms of celiac disease are abdominal pain and bloating,
nausea and vomiting, chronic diarrhea and constipation, or
unintentional weight loss.
The treatment of celiac disease is easy if you comply with
the diet prescription that you are assigned to.
The diet prescription for celiac disease is a
life-long gluten-free diet.
A gluten-free diet means that wheat, barley, and rye
must be completely eliminated from the diet.
Instead, you can include foods such as potatoes,
rice, soy, and flax.
So I am going to show you a quick and easy recipe of
chewy granola bars that's gluten-free and delicious.
So here we have gluten-free oats, and you'll need
2 cups of those.
You'll need 1/2 cup of milk, 1/4 cup of melted margarine,
1/2 cup of brown sugar, and 2 medium eggs.
So first we have to pour the gluten-free oats into the bowl,
the mixing bowl, and you want 2 cups of those.
Be sure the oats are gluten-free because
regular oats have gluten in them.
Then we're going to put in our packed 1/2 cup of brown sugar
and our 1/2 cup of chopped walnuts, and we're just going
to mix those around and get an even mixture here,
break up the brown sugar.
Okay, then we're going to crack the eggs separately in a bowl
so that we can break up the yokes and make it easier to
mix them into the dry ingredients more evenly.
You can just use a small wisk to break them up.
Okay, then you want to pour the eggs into
the dry mix and then add your 1/4 of melted margarine and
your 1/2 cup of milk.
Mix those until your gluten-free oats are
nicely coated and moist.
Make sure the egg is nicely mixed into the granola so that
your granola bars don't end up too eggy.
This is an optional part of the recipe but you can add
dried fruit of your choice.
I'm going to add raisins today, but you can also add things
like dried cranberries, dried cherries, dried aprocots,
whatever you have a taste for.
You can add as many or as few as you want,
it just pretty much depends on taste preference.
You just kind of want to fold those in so that they get
evenly distributed throughout the mixture.
Then in a greased or non-stick cake pan, you'll want to
pour in your mixture.
You can preheat your oven to 350 degrees.
After you evenly spread your mixture of granola into your
cake pan, like so, then you'll want to stick it in the oven
for about 15 to 17 minutes or until they're golden brown
and firm to touch.
At the end, they'll look like this.
You'll cut them into bars and they'll kind of be an
individual healthy snack and you'll be able to enjoy.
So to sum things up, celiac disease is a very treatable
disease as long as you are compliant with the
gluten-free diet that's assigned.
You can purchase gluten-free products with gluten-free
stamped right on the product itself or you can read the
ingredients list and look for gluten-containing ingredients
such as wheat, barley, and rye.
