Prunus cerasus - the marasca cherry.
Grows best in Dalmatia, in the area between the villages of Å kabrnja and Prkos.
The marasca cherry is a special cherry variety with some very special properties:
special dry matter and sugar content and sourness.
It is believed that it originates from Asia. It was brought here by our ancestors long ago
but this particular variety survived until today thanks to the dedicated care of villagers of
Ravni kotari, Å kabrnja, Prkos and other nearby villages.
The fruit is plucked in many ways: by hand, using machinery
or poles so as not to damage the branches.
These poles are made of plastic or wood and by gently tapping them against the branches
the cherries fall onto protective nets or nylon tarps placed under the trees.
During picking, leaves are removed with blowers, the cherries are collected into buckets,
put in plastic barrels and then taken to a buying station.
Make juices from ordinary sour cherries and from marasca cherries and taste them.
You will notice the difference immediately.
We believe the reason lies in the soil and the climate: the strong wind
on the one side and the sun and the sea on the other.
The soil agrees with it, making it so unique.
That is what makes marasca cherries so recognizable.
This cherry variety grows nowhere else.
We have a product that is produced by us alone and no one else and we are very proud of it.
Marasca cherries arrive at a factory by truck in barrels.
They are processed almost immediately.
They are put through grinding, enzymatic treatment,
pressing, rough and polishing filtration in order to preserve the key chemical
and physical properties of marasca cherries.
It must be said that sour cherries have a lower dry matter content
that is, they contain less sugar.
Marasca cherries are specific in that they have high dry matter
content, which rises to 30% sugar.
Compared to continental cherry varieties, they are less sour
and have a deeper and more intensive purple colour.
When marasca cherries reach us in Stubica, we take 10% of the shipment
and check the dry matter content, colour and sourness.
We also check whether it contains impurities, such as
leaves or branches and whether any fermentation has occurred.
In other words, all the quality parameters are checked upon the arrival of the shipment.
The concentrated juice is used to make the end product
that customers can find in 0.75 l glass bottles in the health food departments of their shops
a pure marasca cherry juice concentrate that everyone can enjoy.
Due to its specific properties, it is especially recommended for
children, the elderly, diabetics and pregnant women.
