Pulao is a very delicious recipe made from rice
Today I'm going to make Vegetable Pulao
Lets see the ingredients required for making Vegetable Pulao
For making this we will need
Long Grain Basmati Rice - 1 cup, washed and soaked in water for 1/2 hour
Cauliflower - 4 florets, cut into pieces
Capsicum - 1/2, chopped
French Beans - 8 to 10, chopped
Carrot - 1, medium sized, chopped
Ginger - 1 inch piece, finely chopped
Potato - 1, chopped
Green Peas - 1/2 cup
I have washed and chopped all the vegetables
Salt - 1 1/2 tsp, adjust to taste
Garam Masala - 1/4 tsp
Asafoetida - 1 Pinch
Cumin Seeds - 1 tsp
Whole Garam masala consist of -
Cinnamon stick - 1
Cloves - 6 to 7
Pepper corn - 8 to 10
Black cardamom - 1
Clarified Butter or Oil - 3 tbsp
Cashew nuts - 16
Red chilly powder - 1/4 tsp
Water - 2 cup
Lets start making Vegetable Pulao
Heat a cooker
Add clarified butter / oil
Let it heat
Oil is heated
Now add whole garam masala
Add cumin seeds
Add asafoetida
Add cashew nuts
Masala has roasted, now add vegetables
Saute vegetables for 2 minutes
Add water
Add red chilly powder
Wait till the water boils, then add rice
It has boiled
Now add the rice
Add salt
Add garam masala
Mix well
Cover the cooker with lid
Remove the vent weight
Turn the flame to high
Once pressure is built in the cooker and steam rushes out, turn flame to low
Cook it for 12 to 13 minutes
It's been 13 minutes, now turn off the flame
Let it rest for another 2 minutes
It’s been 2 minutes, now remove the lid
Our pulao is ready, now take it out into a plate
Vegetable Pulao is ready
You can serve it in lunch or dinner with any pickle, chutney, papad or raita
