I'm going to be talking about making macaroni and cheese for
a person with phenylketonuria, also known as PKU.
A person with PKU needs to consume a diet low in protein.
PKU is something that all newborns are screened for
because it occurs in 1 in every 15,000 people.
A person with PKU, they lack the enzyme needed to break down
phenylalanine, which is an amino acid found in proteins.
So they have to consume a low protein diet, otherwise it could
lead to impaired mental function or mental retardation.
But a person with PKU can lead a normal life if they consume
little protein and using supplements.
So I'm going to make macaroni and cheese.
First thing you need to do is use special pasta that's
low in protein, and one brand that I've seen is
Aproten pasta, so the pasta is low in protein.
And the first thing you would do, which I have already done,
is boil the pasta like it says on the directions,
then you set that aside.
Next, what you need to do is you add cheddar cheese soup,
2 tablespoons, and it's low in protein and you use so little
that there's not much protein in it.
You would be cooking this on the stove when you do this.
Then you add water, a tablespoon of water.
So you'll be cooking that on the stove and once it
gets creamy, you add tomato sauce or pizza sauce, and
it's also low in protein.
So you would stir that until its heated up and creamy
and all blended together.
Then, when you have a serving dish you can add the pasta,
and I used a cup of pasta.
And then you add the mixed-up cheese and tomato sauce.
It's a very simple recipe.
And then you just sprinkle with pepper, just enough,
however much you like.
And this would be the finished product.
