Hello and welcome. I'm Viviane, with

This sandwich
is so delicious and so easy to assemble that I often make it
for lunch -- even on busy days. But I'll tell you what makes it
really special... it's the pickled shallots. They bring the most
marvelous contrast to the creamy avocado hummus. Let's make it!
Heat a panini maker or griddle on high.
Place the pita in it
and grill until grill marks appear.
Weather permitting, of course, you can do this on an outdoor grill.
Spoon the hummus
on the grilled pita, about half a cup worth of it,
and then spread it evenly.
Sprinkle with a little bit of the toasted coriander,
drizzle with a little bit of the avocado oil,
dot with the pickled shallots and the baby spinach.
