Today I teach fried yie mien ( e-fu noodles)
use half a pack which equals 115 grams
put yie mien in boiling water
gently separate it with chopsticks
turn off the heat, when separated
cook less than 1 minunte
after cooking less than 1 minute, pour it out
rinse with cold water several times and drain
washed and soaked 5 (m) chinese mushrooms
drain and cut
cut the others as well
cut 50 grams kao wong like thumb length
3 tsp oyster sauce, by Lee *** Kee
1 1/3 tsp chicken powder
2 tsp light soy sauce, a pinch of sugar
1/4 tsp salt
100 ml water from soaking the mushrooms
mix together, it is the seasoning
hot pan, turn to medium heat
put in 1 tbsp oil
saute shredded chinese mushrooms
when you smell the mushrooms flavor, add the seasoning and bring to boil
when boiling, put in yie mein turn to high heat
keep stiring
seasoning is nearly evaporated
1 tsp premium dark soy sauce, by Lee *** Kee
stir well, add kao wong
stir fry to remove the raw taste of kao wong
turn off the heat
a pinch of peper
depending on your preferrence, you can add salt
put in 1 tsp sesame oil, stir together
fried yie mien is done
