Hi I'm Rachel Dayan for Expert Village. Now I'm going to show you how to make a wheat
less carrot cake. It has more eggs but no flour. For this recipe we need 2 cups of carrots
graded carrots, 1 cup of corn meal, 1 tablespoon lemon juice, a cup of walnuts, 5 eggs, 1/3
cup of white wine, a pinch of salt, 1/2 teaspoon of cinnamon, a cup of sugar, and 1/2 teaspoon
of baking powder. We are going to use 2 bowls because we need to separate the eggs one to
mix the egg whites and one to mix the rest of the ingredients, a mixture to mix the egg
whites, a pan, and oil, and flour and a napkin to to grease the pan. So first what we do
we are going to separate the eggs, we are going to beat the egg yolks and the sugar
together to get it very thick. A thick mixture a really thick mixture. You can see that the
mixture is starting to be whiter, lighter orange, lighter yellow which means it is ready
to have the next ingredient. The next ingredient is the wine the white wine and the lemon juice.
We are going to put it together it should be about 1/2 cup together if you don't have
enough then you need to add a little bit more lemon juice. Now we are going to add the carrots
and the nuts to the mixture. At this point I'm going to use a tablespoon because it becomes
very watery and it is going to spray around.
