Today, I will show you how to make a baked coconut cake
it is similar to Glutinous rice flour pastry in CNY
but it is cooked by steam
the coconut cake we made is baked
the steps are simple
Let see how to make it
let see the ingredients we need
First, preheat the oven
While the oven is preheating
we first mix the coconut milk
with sugar together
stir it well
then you can put the mixture
on double boiler and heat it
or cook it directly with low heat
until it is warm and the sugar is dissolved
I choose a lazy way
I will cook it in microwave for 30 seconds
after remove it from microwave
I am ensure the sugar is dissolved
so, i will mix it into the flour
Add it in 3 different times
don't add it one shot
or it will crumbling
stir until the mixture is smooth
then add the egg
also the oil
mix it well
stir until it mixes well
Don't over stir
stir too much the mixture
will make it less chewy
as we worry about the crumbling
I will filter it through a sieve
now the oven is ready
before baking
brush some oil in the cooking pan
so it can easily remove
add in the mixture
and it is ready to bake it
for about 40 minutes
then check and see if it is golden enough
if not, rise up the temperature
and let it bake for another 5 minutes
the cake is now done
I will take it out
after removed from oven
don't touch it
it is still very hot
it is hard to slice it
Let it rest
for 30-40 minutes
slice it when it is cool
it is easy to cut once it is cool
smell so good, so chewy
I really want to eat a piece
the cake is done
