The most fascinating part of my journey as a cook is to realize that what it is that
we eat can do all sorts of things to our body in the best way.
I think it's very empowering for readers to be able to see, "Hey I'm feeling this, so
I could make this, this and this dish." Or "Ohhh, I'm about to undergo a serious round
of chemotherapy, guess what, I better stay away from fried foods, I better eat light."
Or "Oh my gosh, I'm as hungry as a horse and I need to take advantage and get all the nutrient
dense calories I can get. Here are the recipes to do that." Usually we think of healthy food
as being hippy gruel or sort of like brown and "eww" and bland and not tasty. But actually
the food that really nourishes us to our deepest core is some of the yummiest food and the
most nutritious food, because it's a combination of all sorts of herbs and spices and different
types of foods that work synergistically together to get to you to that place where you can
obtain sustainable nourishment. And that's when you want to eat this way. It's not like
"Eww, I'm just eating in this really narrow lane and I'm eating healthy." It's like no,
I'm really nourishing my body. When we have a really good and healthy connection with
food we have a really good and healthy connection with life. And that's really the role that
food can play here.
