Hi! I'm Rich Buccola of New York City and today on behalf of Expert Village, I'm going
to show you how to make stuffed eggplant. Alright, I'm back. You see it's nice and brown.
Not a lot of fat. There is fat in this, but you see it gets absorbed by the eggplant and
it's not really a lot and you sort of want that flavor. Let me just show you what happen
here. This has been sitting about a minute. I'm just going to come over here and show
you. See how nice that is. That's beautiful rice. That's perfect. What you're going to
do is just add it right into the mixture. This is coming together. It smells so good.
Everybody wants some. Everybody wants to eat this. You add that, give it one last stir
mixing everything together. I'm going to give it one good stir like I said, and now we're
pretty much ready to go over and start stuffing our eggplant. This is your mixture for your
eggplant, so keep it a real nice consistency. That's it. You're going to lower this flame.
Actually, just turn it off. Let it sit a second. That's your mixture. Come back. We're going
to start stuffing our eggplant.
