Primal cuts:
from the joint to the bone these are the parts of the animal
that harken back to the most original forms of cooking
hunt it, chop it up, and cook it. You really don't get more primal
than a *** in my mind. I would bring this down to share
with the guys I'm cooking for, but it's just never going to go far enough,
there's just inevitably gonna be guys who are gonna be real jealous they didn't get a slice, so I'm just
going to eat it myself. It's just gonna kind-of be like the cook's special.
I'm just gonna trim it a little bit. It's ready to go. The only way I've ever cooked these with game is in butter,
you can do like, butter balls, butter nut.
Basically I'm just like poaching this little thing in butter.
A little red hot's good.
And then you got like a, buck, now it's hot now...
As soon as it hits that heat,
it firms right up, it puckers right up, it's almost like what you'd picture
happenin if you jump into a cold lake. Me and my buddies used to
go every year this thing called the *** Festival in Montana
when I lived there, and if you missed that it'd be like after they
castrate... castrate all the skiers. The next year when I castrate the cattle
in the spring they'd save those for
that *** festival in the fall.
You could tell someone this is a wonton. And you might get away with it til they bit into it.
Oh it burst. Just got
too built up with pressure.
And like any roast you want to let it cool a minute
because if you cut it when it's too hot, you know, the juices run.
Strangely it has a very
bacon-like smell and texture.
Texture's a lot like sweetbreads. It's almost
identical to thymus gland. Or mild kidney.
bacon-esqe qualities to it, for some reason I'll never understand.
It's also not unlike octopus. If you gave someone this, like I don't know how you'd do it though.
If you could say it was something that it wasn't. I don't know what that would be.
They would love it until they found out what you were doing. But to think how many things go to waste out in the woods every year
is mind-boggling.
