today we will make lobia curry.
let's see what all ingredients are required for making lobia curry.
lobia - more then 1 cup (200 grams) (soaked for 8-10 hours in water)
paste - 2-3 tomatoes,1-2 green chilly,1 inch ginger piece
baking soda- 1/4 tsp
cumin seeds - 1/2 tsp
asafoetida - 1-2 pinch
coriander powder - 1 tsp
turmeric powder - 1/2 tsp
red chilly - 1/4 tsp
oil - 2-3 tbsp
garam masala - less then 1/4 tsp
salt - as per taste (1 tsp)
green coriander- 2 tbsp (finely chopped)
soak lobia 8-10 hours before.
if you are making lobia in morning then soak it in over night or visa-versa.
this makes lobia more tasty and easy to cook.
place lobia in cooker for boiling and add water.
keep the level of water1/2-.45 inch above lobia.
add baking soda, salt (half the amount)
turn on the gas,close cooker and cook for 2-3 minutes more pn low after it simmers for once.
meanwhile prepare masala for lobia.
add oil in preheated pan.
when oil gets hot add asafoetida and cumin seeds.
after suating cumin seeds add turmeric powder,coriander powder and saute the masala for while.
now add tomato-ginger-green chilly paste.
saute the masala until oil starts floating on the surface.
appropriately cooked masala brings taste and nice texture to the sabzi.
add red chilly powder as well.
you can increase or decrease the amount of red chilly as per your taste.
it wil take 4-5 minutes in sauting the masala and keep stirring it after every 1-2 minutes.
if you wish to make onion lobia then take cut two onions finely, after sauting cumin seeds add onion and roast until it gets little pinkish in color.
like wise add all spices.
lobia are boiled now add it in masala.
mix all ingredients nicely and add water as per your preference for making gravy.
add salt and garam masala as well.
if you need cover and cook for 1-2 minutes so that all spices get absorbed in lobia.
lobia is ready;now add green coriande rin the last.
ad green coriander in the last so that its aroma stays for long in the sabzi.
tempting lobia curry is ready.
we have used more then 1 cup of lobia fo rmaking lobia curry.
this much quantity can be served to 4-5 family members.
serve lobia curry with chapatti,parantha or naan.
