There’s this craze around eating cholesterol increases bad cholesterol, so about cholesterol
endogenously in our system. It’s about 20 percent of the cholesterol you're eating from
food, so animal proteins that have cholesterol in them and about 80 percent is endogenously,
so inside of our bodies made by the liver. And the number one thing that triggers your
body to make more cholesterol is inflammation caused by refined carbohydrates and sugars.
So we really have this misperception around cholesterol. I can tell you, if I take a patient
of mine that’s on the standard American diet – lots of refined foods, lots of sugars,
lots of carbs – we take out the muffin, we take out the bagel, we take out all of
that kind of stuff and really go to more of the Paleo-type diet, which is pretty high
protein, but it’s also very, very high vegetables, that profile completely shifts.
